The Eden Quality Damast series is made of Japanese Damast stainless steel with a core of hardened VG10 steel. Damast steel exists of a large number of on top of each other forged layers of different types of steel which results in an aesthetic pattern.
The Eden Quality Classic VG10 series is made of high quality stainless steel with a core of hardened VG10 steel. The non hardened outer layer is extremely rustproof. The hardness of the VG10 steel core is ca. 60 Rockwell C. This is notable harder then the most German knives which have hardness about 56 and 58 Rockwell C.
The Eden Quality Japan series is made of German X50CrMoV1 stainless steel which has excellent rustproof characteristics. Because of a lower carbon percentage the hardness of this steel (55 Rockwell C) is lower than the Japanese VG10 steel, but still enough for good cutting characteristics.
We advise to store your knives well protected and take care of them regularly to enjoy them as long as possible. It keeps the knives in an optimal condition and cutting remains a pleasant and save job.
