F.A. Porsche Japanese waterstone.
F.A. Porsche P11 Japanese whetstone.
This stone is soaked in water before sharpening.
When sharpening, the stone forms a residue on its surface and it is this residue that actually sharpens the knife.
F.A. Porsche design, by Chroma
These knives made by Croma are the perfect combination of modern ergonomic design and first class materials and finishing.
The blades are made of high quality Japanese 301 steel and - just like e.g. Global knives - they are thin and sharpened using a small angle. Like all Japanese knives the Porsche design knives are sharpened all the way to the end of the blade. This makes it easy to sharpen the knives on a sharpening stone.
The handles designed by F.A. Porsche are made from 18/10 CrNi steel. The metal pearl clearly demarcates the end of the handle for better control when cutting.
Sharpening a Japanese knife
Japanese knives are sharpened using a much smaller angle than for instance European knives and are sometimes sharpened asymmetrical. Therefore these knives should never been sharpened on a sharpening device design for sharpening using a standard angle. Also we do not recommend sharpening these knives on a regular sharpening steel.
The ways to sharpen Japanese knives are:
- On a fine sharpening stone
- Using a ceramic or diamond coated sharpening steel.
- Using a
water sharpener designed for Japanese knives
