Kitchen knives can be divided into two groups: European with a 20 degree sharpening angle (per side, so 40 in total) or Japanse/Asian with a sharpening angle of approx. 15 degrees (per side, so 30 in total). The advantage of the Asian sharpening method is that the edge is thinner and can therefore be sharpened sharper. The advantage of the European sharpening method is that the edge is a little thicker and therefore less sensitive to chipping. In many kitchens you find both types of knives. Of course these knives need to be sharpened the right way, with the matching sharpening angle. 

While many electric sharpening machines are suited for either one or the other sharpening angle, the Chef'sChoice 1520 can handle both. This sharpening machine has three sharpening stages. Stage one is meant to restore the edge of an Asian knife. Stage two does the same for European knives, while stage three is the polishing stage for both types of knives. The knives are sharpened on diamond-coated sharpening stones. The left and right side are sharpened individually to make sure that one-sided knives, something that is common for Japanese chef's knives, can also be sharpened with the 1520. 

In addition to smooth knives you can also sharpen serrated knives. For it you only use stage three.

  * Sharpening stage 3: fine ceramic sharpening stone

Ottimo prodotto. Affila bene i coltelli da cucina di ogni marchio .
Semplice di usare a casa. Adatto anche ai forbici. 

Makkelijk te bedienen , doet waar het voor gemaakt is ( messen scherp slijpen) en handzaam. Geluid is zeer acceptabel, staat stabiel op tafel. 
Ga nu de kinderen langs om hun messen te slijpen onder de voorwaarde dat ze een beschermingshoes kopen om van het resultaten zo lang mogelijk te genieten en niet te beschadigen tussen  alle andere keuken spullen. 

Rien à  dire tout est.parfait. j'ai enfin des couteaux et des ciseau qu coupent. Vraiment un article à recommander
