KAI Shun- professional kitchen-knives for professional Chef's.
Manufactured from 32 layers of stainless Damast with a core from Hitachi V-Gold steel.
This is an extremely corrosion-resistant cobalt-alloy with a hardness of 62 on the Rockwell C-scale, which guarantees a very long-lasting sharpness.
Each blade receives a special treatment that gives it the wonderful pattern Damast is famous for, after which each blade is carefully sharpened and honed by hand.
The handles of these high-quality knives consist of laminated black Pakka-wood, which is fully stabilised to prevent damage from moisture.
When seen from the rear, they have the traditional Japanese 'chestnut' shape, which fits naturally in your hand, provided you are right-handed, as they are only made like this.
