This breakfast knife by Robert Herder is a characteristic German breakfast knife in the so-called 'Buckels' shape. The very thin blade is made of carbon steel. This is traditionally grinded very thin (' Dünnschliff '). The result is a very sharp knife, easy to maintain. The down side to carbon steel is that it is more sensitive to rust than stainless steel, which means that the knife should be well maintained. Suitable for cutting e.g. bread, cheese, salami and for spreading butter on bread.

Fijn mes op zich, prima geslepen snijd en smeert heel fijn.
De messen van Robert Herder zijn hoe dan ook prima messen.
Alleen jammer dat er twee soorten te koop zijn, het gewone lemmet en een van roestvrij staal.de eerste die ik kocht was niet roestvrij, er komen vlekken op die lastig te verwijderen zijn.
Ik snap daarom niet dat de gewonen messen nog worden verkocht, in de Keuken heb je alleen maar Roestvrij materiaal nodig

Als vanouds is Herder natuurlijk een prima mes. Doordat t Carbon is verkleurt het wel maar dat heeft ook zo zo’n charme. een genot om met zo’n boterhammes te eten. De ronde punt is erg handig mbt het smeren op brood. Maar vooral de scherpte: daar kan geen ander mes tegenop.

Ich hatte eines dieser Messer geschenkt bekommen und wollte 4 Stück nachbestellen. Wußte aber nicht,, dass es neben der rostfreien Kling (meins) auch die Carbonklinge (nicht rostfrei) gibt, achtete also bei der Bestellung nicht darauf. Ich erhielt die Carbonklinge.
Wunderte mich über Flecken und Rost auf der Klinge und habe erst im Internet über die Eigenschaften der Carbonklinge und wie sie zu behandeln ist gelesen. Die dem Messer beiliegende Beschreibung sagt nichts zur Pflege, ausser: nicht spühlmaschinen geeignet. Das Messer muß sofort nach Gebrauch abgewaschen, abgetrocknet und eingeölt werden. Dieser hohe  Pflegeaufwand macht es für mich nur beschränkt alltagstauglich.

de ontbijtmessen zijn uitstekende kwaliteit als alle herder messen.  het verbaast me wel dat de vorm enigszins veranderd is.  Niet hetzelfde als het fotootje.  ik heb de oude die wel hetzelfde is natuurlijk nog maar deze is enkele mm korter en wat rustieker zeg maar.  jammer.  is dat nu alleen of is dat een blijvende verandering?
