How to use the Chef'sChoice CC312
There are two sharpening stages. In stage 1 the CC312 uses a fine diamond-coated metal disc. For stage 2 an ultra-fine diamond-coated disc is used. During both stages you sharpen the knife at a 20-degree angle. Japanese knives are therefore less suited for this sharpener. Sharpening on the CC312 ensures that only a minimal amount of material is removed. As such the sustainability and quality of your knives is maintained.
In stage 1 you sharpen blunt knives to end up with a new edge and the right sharpening angle. Pull blunt knives approx. 10 to 15 times through the machine. If you clearly feel a burr you continue to stage 2.
During stage 2 you polish the knife to end up with a burr-free and razor-sharp edge. Pulling it through the sharpener four to six times is enough. Serrated knives can only be sharpened in stage 2. You can also use stage 2 to retain the sharpness of your knives. Here the same applies: pulling the knife through the sharpener four to six times is enough.
How to clean the Chef'sChoice CC312
The outside of the sharpening machine can be cleaned with a moist towel. Empty the collection container at least once a year. To do so you need to open the magnetic cleaning lid underneath the machine. Sharpening your knives has never been so easy!
