How to use the Chef'sChoice CC270 Hybrid
There are three sharpening stages. In stage 1 the CC270 uses a coarse diamond-coated metal disc. A fine diamond-coated disc is used for stage 2. Stage 3 consists of polishing the blade to create the ultimate sharpness and a burr-free finish. The flexible precision guides ensure that the angle remains constant. Sharpening on the CC270 ensures that only a minimal amount of material is ground away. This ensures the durability and quality of your knives.
- In stage 1, you electrically sharpen dull knives to get a new edge and the correct sharpening angle.
- In stage 2, you electrically sharpen the new edge and create a second sharpening angle.
- During stage 3 you polish the blade to create a burr-free and razor-sharp edge. This last step is not electric. Serrated knives can also be sharpened during this stage.
The CC270 Hybrid is equipped with diamond-coated sharpening discs. These make it quick and easy to sharpen the hardest knives. This sharpener sharpens knives at an angle of 20 degrees. This angle is ideal for traditionally sharpened knives. Asian knives are generally sharpened at an angle of 15 degrees. You can also sharpen these knives in the CC270 Hybrid, but the original sharpening angle will be lost over time.
