This Sakai Takayuki carving knife is characterized by its beautiful damask steel blade. The carving knife has 45 layers of hammered damask and a hard core of Swedish steel. The hammered top of the blade prevents the meat from sticking to the blade. You can compare it to the granton edge on some Western chef's knives.
