Looking for a santoku knife that’s a cut above the rest?

With this **Wüsthof Gourmet Santoky knife with dimples 17 cm** you will have the perfect knife close for the more detailed tasks in the kitchen. Specifically developed to prepare Sushi and Sashimi but can do so much more. Finely cutting herbs or vegetables will, for instance, also be a piece of cake. Because the blade is enhanced with dimples little air bubbles emerge. As such food does not stick to the blade.

## Wüsthof Gourmet handle


The polypropylene handle is attached to the blade with rivets. The ergonomic shape feels comfortable in hand to make sure you can continue working without wearing out your hands. The knives are enhanced with the NSF mark and can therefore be used in the professional kitchen.


## Wüsthof Gourmet blade


The blade is cut from a single piece of chromium-molybdenum-vanadium steel with a laser. The production method is cheaper than forging, but still leaves you with very good kitchen knives when using the right type of steel. Afterwards the steel is hardened up to 56 Rockwell. The result is that the blade retains its sharpness longer in comparison to other brands in the same price range. But that is not all! The edge is also easy to sharpen. Even though these kitchen knives are dishwasher proof we advise you to clean them by hand.

The Wüsthof Gourmet collection is made for the amateur chef. As a basis for this collection Wüsthof used the Classic collection to come up with a similar knife for a more affordable price. And they were successful! The blade seamlessly merges with the handle making them very similar to the knives from the Wüsthof Classic collection. However, because of the production method used the knives from the Gourmet collection are a lot more affordable. The weight is also lower, which is great for many users. The Gourmet collection is expansive to make sure everyone can comprise the perfect knife set. The blade is too light, it has no weight to it, which limits its use as a chopping knife. It is not a full tang handle the underside of the handle does not show the metal. It is very thin, too light and not full tang. As a former chef I would not use this knife.

The usual Wusthof quality.  Thin blade easy to cut anything with it. 
Takes a while to re-sharpen. That is a small price for staying sharp long as it made of good quality, hard steel.

In vergelijking met mijn Global koksmes valt dit mes toch een beetje tegen.

Het kwam bepaald niet scherp uit de verpakking en de kuiltjes maken weinig verschil voor het vastplakken van afgesneden stukken (de belangrijkste reden dat ik dit mes kocht). Wellicht dat een mes met gaten in het lemmet (zoals getoond in een van de K&T videos) wel een echt verschil maakt.

Misschien moet ik anders gaan snijden, maar ik moet in ieder geval gaan slijpen.

Deze Santoku laten graveren door knivesandtools, de volgende dag hadden we het mes al binnen, prachtig gegraveerd, moest wel nog even schoongemaakt worden voor het als cadeau gegeven kon worden. Snijd fijn, ook door tomaten. Voorheen huilde ik tranen met tuiten bij het snijden van uien, nu heb ik nergens last van. Prachtig mes.
