The **Wüsthof Ikon Santoku 17 cm** is a versatile kitchen knife with a luxurious look and feel. Perfect when cutting, crushing and scooping meat, fish or vegetables and also amazing to look at. The blade is enhanced with dimples. As such vegetables and potatoes won't stick to the blade.

## Handle


This relatively exclusive Wüsthof collection is characterized by the remarkable handle material that was used. The handles are made from African black wood. This is a stunning dark type of wood that is also used to make wooden instruments such as oboes and clarinets. The grains in the wood make each product unique.


## Blade


Even though the handle is quite the eye catcher it doesn’t mean that little attention was paid to the blade. Like with other Wüsthof collections the blade is made from X50CrMoV15 steel, which was sharpened according to the PEtec method, and polished by hand. This type of steel is also easy to sharpen.


Another advantage of this blade is the crop. It doesn’t extend all the way to the edge, but does separate the handle from the blade. As such you not only keep your fingers safe, you can also use the entire edge. Also great when you want to sharpen the knife.

Uitstekend mes. Ligt goed in de hand en snijdt als een zonnetje. Ik heb er later nog een keramische slijpstaaf bij gekocht om hem scherp te houden. Het is fijn dat Knives and Tools op hun website ook informatie over het onderhoud geeft. Daar zou ik wel wat meer video's bij willen zien. Slijpen met een slijpstaal of met een steen luistert namelijk nogal nauw.

An excellent knife although expensive. The balance of the knife is good and it is comfortable to use. The edge is very sharp which makes cutting soft fruit and vegetables easy. I am very satisfied with this product.
