The kitchen knives of the Susumi SG2 series are hand-forged in Japan. Susumi means progress, this name was chosen because the design and choice of materials are very innovative. The blade is made from SG2 powder steel with a damascus finish. This is a type of steel with a very fine structure and a hardness of 62-63 HRC. Thanks to this hardness, these knives can be enhanced with a very thin grind. The handles are also made of a high-quality material: 'red sandalwood'. This is a type of rosewood with a beautiful deep red colour.

## Features of Yaxell Ketu kitchen knives

The blade of the Yaxell Ketu knife consists of three layers. Two layers of stainless steel on the outside, enveloping a core of SG2 powdered steel. This is a very hard steel with a hardness of as much as 63 HRC! As such, you can sharpen the knife to razor-sharpness. The blade has a hammered finish. In Japanese, this finish is called Tsuchime. It is a traditional and artisanal Japanese finish originally created by the blacksmith's hammer. The handle is made from pakkawood. It uses beech wood as its base and features a stunning black and gold-brown colour. Pakka wood is a laminate made of thin layers of wood impregnated with a strong synthetic resin. ## Yaxell Super Gou

161 layers of damasteel with a core of SG2 powder steel, that is the Yaxell Super Gou collection. These stunning knives are enhanced with 80 layers of stainless damasteel on both sides. The SG2 powder steel, of which the core is made, can be sharpened razor-sharp. As such you can effortlessly cut everything you need for your dishes.

The round handle is enhanced with three rivets. As such the handle looks a lot like a European kitchen knife. These knives do not only feel comfortable in hand, the handle is also solid and sustainable. The handle is made from micarta. This is linen impregnated with epoxy resin.
