How to use the Chef'sChoice CC22CC2100 knife sharpener
There are three sharpening stages. With the included sharpening module the knife is sharpened at a 20-degree angle during every stage. Japanese knives are therefore less suited for this sharpener. We recommend for these knives the Chef's Choice CC2100/SM 15 degrees sharpening module. In stage 1 the C2100 uses a coarse diamond-coated metal disc. A fine diamond-coated disc is used for stage 2. Stage 3 consists of stropping the blade to create the ultimate sharpness and a burr-free finish. The flexible springs ensure that the angle remains constant. Sharpening on the CC2100 ensures that only a minimal amount of material is removed. As such the sustainability and quality of your knives is maintained.
- In stage 1 you sharpen blunt knives to end up with a new edge. Sharpen the knife in stage 2 to finely sharpen the edge.
- In stage 2 you finely sharpen the edge. You also use this stage if you want to maintain the sharpness of your knife.
- During stage 3 you strop the knife to create a burr-free and razor-sharp edge. Serrated knives can also be sharpened during this stage.
How to clean the Chef'sChoice 2100
You can easily remove the sharpening module and clean it by hand or in the dishwasher. In addition to cleaning the sharpening module you also need to empty the storage container underneath the sharpening module. This container collects all the metal you remove as you sharpen your knife. This sharpening machine with diamond performances turns sharpening into a completely new experience!
