You use this #1000 stone actually as your ‘main stone’. It does a lot to make sure you end up with a razor-sharp knife and ensures that the polishing stones you can use next, will be able to do what they need to. It is a hard sharpening stone, but in terms of feedback it feels a little softer while you use it. As such you will know exactly what you are doing while sharpening. Submerge it for 30 seconds and you will notice that it is already almost completely saturated.
