The **TOPS El Chappo** is a robust cleaver, made for outdoor kitchen tasks. It cuts and chops vegetables, but it is primarily designed for cutting meat. You could see him as the kitchen brother of El Chete, the big machete from TOPS.

What's striking about the El Chappo is its fairly thin grind. This once again underlines the idea that this knife is made for food preparation rather than heavy outdoor use. Nevertheless, the 1095 carbon steel holds its own, and El Chappo can really take a beating. It is still a TOPS knife, after all!

The handle is made from micarta. There are red liners between the micarta and the tang of the blade. These offer a nice contrast and give El Chappo a high-end look.

El Chappo comes with a simple, compact Kydex sheath that only protects the edge, so it fits compactly and securely in your backpack.

Sehr schönes Messer für die Outdoor Küche 

I use the cleaver in a professional kitchen to break through different gourds and take off bones in poultry. The TOPS El Chappo retains its edge well. The long flat edge is easy to sharpen - like a nakiri. I've never used a knife with a micarta handle, this looks cool and feels secure at all times. The included knife guard fits well. If you buy this knife, make sure it's completely dry because it rusts easily - despite being an 'outdoor' model.

Note: Whilst writing the review, I realised the model is slightly different from the store image. The TOPS El Chappo does not have a bolster! Mine did not come with the HP100 knife oil either, but that isn't a problem for me. My model number is Z-137A not X-261.
