This Wüsthof knife sharpener has two phases: a coarse carbide sharpener and a fine ceramic sharpener. When you use this sharpener to sharpen a knife for the first time, use the coarse phase. By doing so, you restore the fold and ensure that the knife has a sharpening angle of 17 degrees on each side.
The second sharpening phase, the ceramic one, is used to refine the edge. In the same way as the first phase, lightly run your knife through it a few times while applying steady pressure. This allows you to postpone using the coarse sharpening phase.
