Très joli désosseur Professional S, avec sa belle poignée ergonomique, sa finition haut de gamme sans ornements inutiles, son tranchant efficace dès la sortie de la boîte. Je l'utilise parfois avec la fourchette de service de la même série (poulet, couronne ou rôti d'agneau). Et en plus, facile à affûter!

Not as good as I was hoping, the grind on the edge is not very good and it is nowhere near sharp enough . It will sharpen to a better finish but I wish I had spent the extra and got a better knife . 
The blade is thin and flexible could be used for skinning fish .
