Zwilling knives by JA Henckels
Zwilling knives, known by the twin logo, are of super quality. Zwilling is sold worldwide and exists since 1731. Zwilling Henckels knives are ice-hardened in production. This way, tensions are removed from the steel and the structure is improved. The rust-resistance increases as well, which is also a major advantage.
Zwilling values the base of its knives so highly, that they have been producing steel themselves since 1965.
Super quality steelZwilling knives are made of steel with a carbon content of 0.5%. The result is a blade with a hardness of 56-58 HRC with good rust resistance. The kitchen knives in the Zwilling Cermax and the Miyabi series are the exceptions to the rule. The Cermax knives are made of harder steel and have a hardness of 66 HRC. The Zwilling Miyabi knives are made of 33 layered damask steel.
