The advantage of a diamond steel compared to a honing steel, is that the diamond sharpening steel actually sharpens the knife, while a honing steel only straightens out burrs in the edge. The effect of straightening the edge with a steel disappears quickly and some knives, specifically those of better quality, are too hard for the use of a honing steel.
