This Sakai Takayuki 45-Layer Damascus WA paring knife is characterized by its beautiful damask steel blade. The knife has 45 layers of hammered damask and a hard core of Swedish steel. The hammered top of the blade prevents food from sticking to the blade.
The handle of the Sakai Takayuki is made in a traditional Japanese manner. The handle made of walnut sets off beautifully against the dark crop. The knife has a classic Japanese edge, which means it is razor sharp when you take it out of the box. True Japanese quality, for a pleasant price point!

**Writing it after three weeks of use. A great knife for daily use. The blade is extremely sharp. There are a few darkish spots on it, hope it's just particularity of the steel and not anything serious. The AUS10 steel it's made of is high on carbon (~1%), so the blade should maintain the sharpness well - and that's what it does. It should be stainless but anyways it's better to wash it by hand and wipe dry immediately. So far completely happy with the knife.
