Tojiro is one of the largest Japanese knife brands. This innovative brand has won several design awards. Traditional Japanese techniques are combined with modern production methods. The Tojiro kitchen knives are razor-sharp and very durable.
With knives you always try to find the right balance between hardness (sharp, but brittle and less stainless) and smoothness (more stainless, but less sharp and brittle). Tojiro chooses for a multi-layered blade. The VG10 core is covered in 13-chrome steel. This makes for a unique combination of hardness and corrosion resistance which you won’t find with carbon steel.
The handle is made out of lightweight oak. The handle is in the traditional Japanese D-shape. Basically, it’s made for right-handed people but it does not bother the grip when you’re a lefty.
