This Wüsthof Classic chef's knife 20 cm half crop is quite similar to the 'normal' Classic chef's knife 20 cm. It mainly differs in the knife's crop. While the other chef's knife has a crop that extends to the heel of the blade, this chef's knife has a half crop. The advantage is that you can use the entire blade when cutting. Moreover, the knife is easy to sharpen because you will not bump the crop.
The half crop and slightly thinner blade ensure that the chef's knife is lighter than its counterpart. This results in non-tiring work, which is certainly a plus with the cutting jobs that take more time. Like the rest of the Classic series, this chef's knife also has a blade that is forged from one piece of steel: X50CrMoV15. A stainless type of steel that retains its sharpness well and is also easy to sharpen. The blade has a full-tang construction. This POM handle is seamlessly secured with three rivets. Hygienic and sustainable.
