Hand-forged Japanese paring knife with a blade length measuring 10 cm from the Eden Susumi series.

Hand-forged Japanese paring knife with a blade length of 10 cm from the Eden Susumi collection. Eden Kanso Susumi knives are thin and razor-sharp. The SG2 powder steel is stainless and, with a hardness of 62-63 HRC, rock-solid. Next to that the side of the steel is also considerably harder than is common for damascus steel. This means that the side of the knife is much better protected from scratches.

## Nice SG2 steel blade

The blade of this knife is made from SG2 powder steel, hence the name. This is a type of steel with a very fine structure and a hardness of 62-63 HRC. Because of this hardness you can sharpen the Susumi knives extremely thin. The knives are corrosion resistant and the damascus steel has the same hardness as the SG2 core. The knives are more scratch-resistant than most knives made from damascus.

## Traditional red sandalwood handle

The handles are made from red sandalwood, a type of rosewood. Perfect for a Japanese knife such as this. The handle has a traditional Japanese D-shape. As such the knife feels comfortable in hand. Because of the asymmetric design, however, this knife is suited for right-handed use. 

## Sharpening Eden Susumi kitchen knives

Don't sharpen these knives in a pull-through sharpener! Because of the rock-solid steel and the sideways movements that occur in a pull-through sharpener pieces of the edge could break off. We therefore advise you to carefully sharpen by hand on a sharpening stone, sharpening steel or with a sharpening system.

    Très beau couteau. Lame de très bonne qualité.
    Belle finition.


Ik heb dit mes gekocht in combinatie met de 13.5 - 18.5 - 20.0 cm varianten van deze serie. Overeenkomend met de omschrijving zijn deze messen zeer scherp. Niet scheermes scherp zoals ik had verwacht. Echter laten ze de meeste gemiddelde en goede messen wel ver achter zich. plus punt na een kleine 3 maand zijn ze zeker nog steeds even scherp. Van de 4 gebruik ik dit mes het meest aangezien deze zeer handbaar is. Mocht je overwegen dit mes aan te schaffen kan ik aanraden de 18.5 of de 20 cm erbij aan te schaffen. De handvatten van deze serie verbleken iets bij het reinigen met afwasmiddelen! al om al raad ik deze messen zeker aan ik :)

bon rapport qualité-prix et tranchant rasoir grace a l'acier SGPS (avoir de bonnes notion d'affutage pour l'obtenir)

Tranchant parfait (meilleur que l'acier VG 10 / passe le "test" de couper du papier à cigarette). La liaison manche / lame pourrait être de meilleure qualité :on voit la sous couche de bois brut. Donc un peu cher compte tenu de l'esthétique, mais meilleur à l'utilisation que des produits de même prix. 

Prachtig mes en vlijmscherp. Ik gebruik zelf het koksmes meer dan dit mesje, maar mijn vrouw is er dol op.
