The **Chris Reeve Sikayo chef's knife, 22.8 cm** can only be called remarkable. Sikayo might sound Japanese, but it means sharp in Zulus. The exceptionally sharp edge of the Sikayo definitely lives up to its name. The high blade is sharpened on one side to make sure the knife is razor-sharp. Because of the curve in the edge you don't have to apply pressure while cutting and you can easily make a rocking movement which makes a chef's knife so efficient.

 The blade has a one-sided grind. This remarkable grind comes from Japan and is perfect for right-handed use. The total sharpening angle is smaller which doesn't only make the knife sharper than a knife with a double-sided grind, it also ensures that ingredients don't stick to the blade because the grind ends halfway across the blade. The scales of the handle are also designed as such that they feel great in hand if you are a right-handed user.

 ### Blade

 The full-tang blade is made from CPM S35VN. A stainless type of 'super steel' developed by Chris Reeve in cooperation with Crucible Steel Company. CPM S35VN was specifically designed for knives and other cutting tools. This is not the first Chris Reeve knife that is made from this type of steel. For that reason we can say for sure that this type of steel is incredibly popular amongst the experts. It is hard but easy to sharpen, retains its sharpness for a very long time and won't easily chip. The steel contains 0.5% niobium. That doesn't sound like a lot, but because of the addition of this element CPM S25VN is 20% stronger than its predecessor: S30V.

 ### Handle

 The handle is made from Ultem 1000. An incredibly strong polyetherimide resin with a glass transition temperature of 217 degrees Celsius and a melting point of well over 400 degrees Celsius! In addition, it has a high chemical resistance to salt, acid, alcohol and other corrosive substances. It won't easily break or tear, is incredibly hygienic and easy to clean. The end of the handle is enhanced with an opening to make sure you can hang the knife. Ultem 1000 is relatively translucent which is why you can see the Chris Reeve logo on the steel through the handle.
