You use this Shapton Glass Stone sharpening stone set to sharpen your already sharp knives and to make sure they stay sharp. The grain 500 stone is perfect when sharpening blunt knives. The grain 2000 stone helps you sharpen knives that are already relatively sharp. With the 16000 grain you can remove all irregularities and scratches.

It's still early days yet, but I can conform these stone remove material very quickly. I flattened with a Trend Diamond stone, but it left scratches, so invested in the Shapton Diamond stone
