This **Wüsthof 2-stage knife sharpener** is great when sharpening Wüsthof kitchen knives. It has a fixed sharpening angle of 17 degrees per side, 34 degrees in total. This sharpening angle is great for all kitchen knives that need to be sharp, but also need to stay sharp. 

## Sharpening angles

It can be used with almost all European kitchen knives The knife doesn't need sharpened at a 17 degree angle. Do you own a knife that was sharpened at a 14 or 20-degree angle? No problem at all! Move the knife alongside the coarsest slot most and the knife will end up with a 17-degree sharpening angle.

## Sharpening stages

This Wüsthof knife sharpener has two stages: a coarse silicon carbide sharpener and a fine ceramic sharpener. When you use this sharpener to sharpen a knife for the first time, use the coarse phase. This way you restore the fold and ensure that the knife has a sharpening angle of 17 degrees per side. The second sharpening phase, the ceramic one, is used to refine the edge. In the same way as the first phase, lightly run your knife through it a few times while applying steady pressure. This allows you to postpone using the coarse sharpening phase.
