This Chef’s knife from the Wüsthof Classic series is different from other Chef’s knives because the blade is extra wide. This adds weight to the knife, which enables you to do most of the cutting without exercising a lot of pressure on the knife.   
  

Other uses of the knife involve flattening, shaping and scooping of meat, fish, fruit and vegetables.

20 jaar geleden een 16 cm kopksmes aangeschaft, bijna het enige mes wat ik gebruikte, nu een 16 cm extra breed,,, fantastisch gereedschap! De nieuwe vormgeving is niet alleen een streling voor het oog maar is nog ergonomischer, balans precies onder de wijsvinger, het ultieme all-purpose mes. De kwaliteit van Wusthofmessen is bijna niet te overtreffen. De 20 cm versie is de keus voor het 'zware werk'.

We measure the sharpening angle ourselves. This value is the angle per side.  So 20º means that the total angle of the edge is 40º. Please note that knives are almost always sharpened by hand, even in factories. This value is therefore only an indication of a single tool measured by us.
