## Gerber Strongarm: a rock-solid blade
The strong blade of the Strongarm is made from 420HC steel. The HC stands for High Carbon. . That means that this steel has a higher carbon content than regular 420 steel, for example. Steel with a higher carbon content will become harder after heat treatment. Moreover, this steel also contains 13% chromium, which makes it corrosion resistant. The blade is hard enough to use for chopping tasks without losing sharpness too quickly. However, don't worry if your Strongarm does become dull after prolonged use, because it's easy to sharpen. In short; a great steel type for a survival knife!

The black coating adds an extra layer of protection. It also ensures the blade won't reflect light as much. ## What is patina?

The razor-like sharpness is achieved on one hand by the classic Solinger Dünnschliff; the very thinly sharpened edge from top to bottom of the entire blade. Also, the carbon steel which is used for the blade make this Windmill knife sharper than any other peeler!


Because of the relatively high carbon content in the steel, it is very hard but not stainless. It will discolour, especially when fruity acids touch the blade. Depending on what you cut with it, different shades of grey will appear on the blade. This is also known as patina and is nothing to be concerned about. The patina will make it a little less sensitive to rust. However, the knife will never become full stainless, so you will have to take care of it. This will also prevent the patina transferring to the product you are cutting.

After use you rinse the knife with a drop of dish soap and hot water. Clean it directly after dessert or breakfast or the knife will most certainly turn from grey to orange!

Don’t abuse your knife by putting it inside the dishwasher. The strong detergents will ruin the steel and the wooden handle also doesn’t like the heat and humid condition. The sharpness will also dramatically decline so we strongly advise against it.


## Oil to keep it in top condition


When you regularly give the blade and handle a drop of oil the knife will stay in great shape. Especially when you won’t use the knife for quite some time, a little drop of oil will prevent the blade from rusting when inside your drawer. You can use different types of oil such as olive oil, sunflower oil or peanut oil. Traditionally in Japan the use Camelia oil used, which is a bit harder to come by over here.

These specks of rust are usually caused by pit corrosion. Pit corrosion is the most common type of corrosion in kitchen knives of stainless steel.

In hard knives with high carbon content, like knives of VG10 steel and the Twin Cermax knives, pit corrosion is most common. However, pit corrosion also occurs in knives of ‘ordinary’ stainless knife steel.

Are those knives bad? No, a good knife is a compromise and the best cutting characteristics the knife should have you unfortunately must compromise on sensitivity to rust.

In the world of steel there are a [couple types of steel](kato://content/migrated_topic_155) practically everyone knows. If you checked out the page featuring the types of steel used for kitchen knives you probably recognized a couple of them. A type of steel which, until only recently, was relatively unknown in the industry is AUS-10\. This type of steel is produced by Aichi Steel, from the Japanese city of Tokai. AUS-10 is, because of the high-carbon content, by far the strongest type within the AUS-series.

Even though AUS-10 is still relatively unknown it is definitely not unloved. Leading brand Sakai Takayuki, for instance, has enhanced its [45-layer Damast-collection](kato://content/migrated_pageid_78) with this type of quality steel. These stunning knives are absolutely amazing to work with. Why? The 60 HRC knives are rock-solid. As a result the edge is easier to sharpen and will retain its sharpness well.

## Hard but flexible

The hardness of AUS-10 steel is mostly caused by the incredibly high carbon-content of approximately 1.05\. As a result the knives can easily be sharpened leaving you with razor-sharp results. This, however, also means that the knives are relatively fragile. For that reason a specific amount of nickel, manganese and silicon is added to the AUS-10 to improve the ductility and elasticity of the material.

## Carbide formation

The vanadium element also contributes to this. In addition, it is a strong carbide shaper. Carbides are combinations of carbon and other substances, such as vanadium, but also, for instance, chrome, molybdenum and nickel. The connection between these substances can only emerge when they are exposed to very high temperatures for a long period of time.

Knives with a higher number of carbides can often be sharpened a lot sharper than knives with a smaller amount of larger carbides. When sharpening edges with coarse carbides you run the risk of breaking the carbides instead of sharpening them. This could leave you with (small) serrations in the edge. When you are dealing with fine, tightly compressed carbides this won’t happen.

## Sharpening AUS-10 steel

In addition, the combination of vanadium, chrome and molybdenum also ensures that the steel is corrosion and wear and tear resistant. AUS-10 knives will, as a result, not be prone to rust and also don’t need to be sharpened frequently.

If your AUS-10 steel knives did get blunt over time you also need different sharpening materials. We, for instance, do not recommend using a pull through sharpener. You could, however, use coarser sharpening stones then if you were using knives with steel comprised of coarser carbides. This is an advantage when you have a blunt knife and a sharpening stone with a high grain size is no longer sufficient. All in all we can conclude that in the future we will probably hear a lot from AUS-10 steel. It is strong, relatively tough, it can handle rust and wear and tear and can easily be sharpened. Excellent qualities, if we might say so ourselves, to be considered top-quality knife steel!

## Types of steel and rust

So many knives, so many types of steel you might say. You can make a distinction between steel with a high carbon density (carbon steel) and a type of steel with a less high carbon density (stainless steel). As the name might already suggest stainless steel is better equipped against rust. It is, however, not rustproof. When you store a stainless steel knife that is still wet or dirty and leave it there for quite some time it will start to show signs of corrosion.

When you increase the carbon density in steel you will be left with a much harder type of steel that can be grinded down to a very sharp knife. However, the downside of such a high carbon density is that the corrosion resistance decreases dramatically. For this reason it is important to take action!
