The blade of this knife is made of carbon steel. It is very easy to sharpen and hone to a thin edge, making it razor sharp, yet very strong. Carbon steel is more susceptible to rust than stainless steel and therefore needs to be cleaned properly and kept dry. If you prefer an Opinel knife with a rust-resistant blade, you can use the knives with stainless steel.

I love Opinel knives. they seem to fit me. maybe its their simplicity. I use it as a kitchen knife, along with a number 9, I can highly recommend the 12'
