The blade is made from ice-hardened Friodur steel. During this process the steel is heated in 4 stages to 1000°C and cooled to-70 °C. Zwilling perfected this technique, and guarantees optimum sharpness, sustainability, elasticity and corrosion resistance. You also sharpen the knife in five steps. The result is a perfectly sharpened knife. The crop of the knife does not extend to the edge of the blade to make sure you can easily sharpen it on a sharpening stone.
Thanks to the seamless construction and the materials used, knives from the Zwilling Pro collection are dishwasher proof. We do, however, recommend washing them by hand because the detergent in a dishwasher can affect the knives in the long run.
