I decided to buy these having bought two knives from the same range for my son. I was attracted by the quality, steel hardness, lack of full bolster/heal and price of these knives. They are very sharp and so far have held their edge. I've not tried sharpening them yet. The chefs knife is a dream to use. well balanced and a good weight. The bread knife will easily cut through the hardest sourdough crust or softest fresh bread. The parring knife is good for boning chicken etc. Oh, they look nice too :-)
