First off, Knives & Tools offer a terrific service. I ordered on a Monday and received my order on the Wednesday. I had been looking for a sharpening system for a while, as I could not get a consistent result using Japanese waterstones. My choice came down to either the Edge Pro or the KME systems. I decided on the Edge Pro because it offered a lower minimum angle which suited my Global knives better. In use the Edge Pro produced an excellent edge that equaled the original sharpness on my Global knives and the best part is that it is 100% repeatable. I also ordered the magnetic knife clamp at the same time and in my opinion this is a must. Overall I can’t recommend the Edge Pro Apex highly enough.
