Wood is a soft material that won't affect the edge of your kitchen knives. In addition, wood is a living material. It is flexible and will close on its own again. Most of the times wooden cutting boards are made from beech, birch, bamboo or walnut. The main advantage of a large wooden cutting board is that it is nice and firm on your counter tops and won't slide as you use your knife.

## How to use a chef's knife?

When using a chef's knife it is important that the knife stays in contact with the cutting board. You don't need to lift the knife. A chef's knife is meant for cutting, not chopping. That is why this knife needs to stay in place during use. The product you want to cut is moved with your free hand.

Your little finger and thumb to be precise. You hold them behind the three bent middle fingers. Place the tip of the knife on the cutting board, in front of the ingredients you wish to cut. You lift the back of the knife after which you cut the ingredients underneath the knife. You place the bent knuckles against the blade. Now you make a rocking movement with the knife but always make sure the tip of the knife stays in place on the cutting board.

## Advantages of the convex edge

A European chef's knife is always enhanced with a convex edge, compared to the Santoku, the Japanese chef's knife. The convex edge ensures that you can easily make the rocking movement as you use the knife.

## What do you use the chef's knife for?

The chef's knife is an incredibly versatile knife. You can use it to cut vegetables, meat and fish. It's also ideal for chopping herbs, crushing peppercorns and peeling garlic cloves. There are different sizes of chef's knives. It starts at 10.5 cm and can become as big as 30.6 cm.

The [santoku](kato://category/santokuknives) is the Japanese version of the European [chef's knife](kato://category/koksmessen). Where a European chef's knife is recognizable by its pointed tip and convex edge, a santoku has a slightly “blunter” blade shape and a straight edge. This means you cut differently with a santoku than with a European chef's knife. But how does that work exactly? And what cutting techniques does a santoku knife excel at?

## The benefits of a straight edge
Due to the straight edge, the santoku doesn't rock on the cutting surface, as is the case with the more “rounded” edge of a chef's knife. The benefit of this is that the entire length of the cutting edge comes into contact with the cutting board that you're cutting on. You don't have to rock the blade while cutting to use the entire length of the edge. The placement of the handle also helps with this. It is higher than the edge, so your knuckles don't touch the cutting board.

A santoku is super versatile. A real all-rounder! You can use it to cut vegetables, meat and fish. Although we think a santoku knife particularly excels at cutting vegetables. Partly because of the blade shape, but also because a santoku is generally sharper and thinner than a European chef's knife. This makes it really easy to cut vegetables into small cubes for sauces and poke bowls!

Tranching is a cutting technique during which you cut your food into slices. ## The function of a sharpening steel

So even though the sharpening results differ, the way you use a sharpening steel is the same as using a honing steel. You hold the knife at the right angle on the sharpening steel. You make sure the sharpening steel is either flat or straight up with the tip resting on the counter or cutting board. You start at the heel of the edge and move the knife alongside the sharpening steel until you have reached the tip. Make sure the entire edge hits the sharpening steel. That is why we recommend purchasing a sharpening steel that is just as long as the knife you wish to sharpen.

How do you use a sharpening steel?

The [nakiri](kato://content/migrated_pageid_70) is a traditional Japanese kitchen knife. You can recognize it from its rectangular blade with a square, flat tip and straight edge. At first glance a Nakiri looks a lot like a cleaver or even a santoku. And yet there is a big difference between them. A nakiri is often thinner and only made to finely cut vegetables. But how does that work exactly? And what cutting techniques does a nakiri knife excel at?

## The knives we have tested

For this test we have used ceramic knives by Kyocera, who are the biggest player in the market for ceramic knives. Next to that we have also tested ceramic knives from other manufacturers. To compare the ceramic knives we have used steel chef’s knives from Kai, Wüsthof, Robert Herder and our own Eden Kanso Aogami.

### Sharpness out of the box

When we tested the Kyocera knives for sharpness we found out the knives are delivered very sharp. Comparable to steel knives and in some cases even better. We have also tested cheaper ceramic knives but they do not come close to the sharpness Kyocera knives offer.

## User-friendliness

After testing the initial sharpness we have cut onions and carrots for over an hour with six people. Everyone has used all the different knives so we could get a most comprehensive result.

What stood out is that the Kyocera knives cut into the wooden cutting boards we used. When we tried to use them without applying a lot of pressure, the knives do not move very smoothly. It feels a bit like grinding sand paper over the cutting board. In comparison, the steel knives do move smoothly over the cutting board. We have tested two Kyocera knives (the 13 cm and the 18 cm) and noticed a difference amongst them in how easily they cut. This cannot be attributed to the difference in size, but lies more in the thickness and geometry of the knives.

## Chipping

Kyocera adds a booklet to their knives which states that the knives are unsuitable to wiggle with. The knives can only be used for straight cutting. When we used the knives properly we noticed that small pieces of the blade had broken off. We have only tested the knives for one afternoon, but we imagine that when the knives are used over a longer period of time the blade will be damaged very much. An important question remains: Where exactly do the little ceramic pieces go after they have broken off of the blade?
