# What about the warranty?

Almost all products we sell are covered by a manufacturer’s warranty. However, how that warranty works and what the terms and conditions are can differ per brand or product. For that reason we love to tell you more about what we mean when we say warranty and what common exceptions and point of attention are. It may be a confusing amount of exceptions and differences so buckle up: here we go.

## What does your warranty apply to?

In nine out of ten cases you will receive a warranty on **material and manufacturing flaws** when you purchase a product. This means that if there is a defect in the product caused by a flaw in the material, or the manufacturing you are entitled to a warranty.

This also means that wear and tear never entitles you to a warranty. After a while each product will wear out, to a greater or lesser extent. This, however, doesn’t mean that the product or the manufacturer is to blame. Some products wear out faster because they are perhaps of lesser quality. As long as this is inherent to the product, and not an exceptional material or manufacturing flaw you won’t be able to invoke the warranty offered by the manufacturer.

## So what does warranty mean?

What a brand feels should be a part of a warranty differs as well. For instance, if a product breaks within the warranty period you are legally entitled to a repair or replacement. This means that a knife can sometimes be fixed and enhanced with a new blade or any other replacement part. Sometimes it means you will receive a completely new product. If the product is no longer produced the product can be replaced by a product of equal value. This is taken care of by the supplier or manufacturer.

Some manufacturers choose to replace the product with a refurbished product. This is a fixed and checked version of the product. As long as this product is of equal value as the product you sent in, the manufacturer may decide to do so.

## What about the warranty period?

Many products list a warranty period. Often a minimum of two years after purchase, up to life. Within that period you can claim the warranty offered.

It is important to know that for some products the conditions of the warranty differ from other products produced by the same manufacturer. Think of a bottle of oil or a tube of diamond paste for a strop. Fortunately these are also products for which the warranty is (almost) never claimed.

Some manufacturers can also decide to, for instance, offer a standard two-year warranty which they will extend to five years if you register online or send a postcard.

## What does life-long warranty mean?

What life-long warranty means differs per brand. While some brands consider life-long to be as long as the initial purchaser is still alive, some feel life-long actually applies without a limit. However, most common is that a warranty lasts as long as the expected life of the product.

There are American manufacturers who print a label saying ‘Lifetime Warranty*’ on the box. However, when you look up the star on the back of the box you will notice that life-long only means when you live in North-America, and that you ‘only’ get a 25-year warranty if you live elsewhere.

## Defects due to incorrect use

Sometimes something happens to a product because it isn’t correctly used. Defects caused by incorrect use are practically never a part of the warranty. Simply think before use if the product was intended for what you are about to do with it.

A favourite example is batoning with an outdoor knife where you cut or split a piece of wood by using a baton-sized stick to hit the spine of a knife. Yes, many knives can handle this. Some are even made for it. However, in the end it is a task which should be carried out with an axe.

We do have to state here that some brands give you a warranty on anything. No matter what you do with the product. These are, however, rare exceptions.

## Rust and warranty

Knives rust. That is a given. Even when a knife is made from ‘stainless’ steel it can still rust. It is, after all, not ‘stain free’. This is the result of external factors: moisture, acids or salt. Or a combination of the three. Think of salty sea air or fruit acids. Just clean and maintain your product well. You could, if need be, also use [Flitz](kato://product/FZ002) to remove the rust. ## Modifications and disassembly

For many products the following applies: if you modify the product yourself your warranty will expire. Sharpening a knife is, of course, not included as it is necessary maintenance. But as soon as you start filing, painting, sanding, soldering, anodizing etc. your warranty will expire immediately. There are manufacturers who look at this a little more pragmatically: a small modification to the handle won’t affect the blade, which will make them lenient. But never assume they will be!

Disassembly could also lead to the warranty expiring. Think of the famous stickers on electronics: ‘Warranty void if seal broken’. It, however, really differs per brand how this is handled. First you should always check the website of the manufacturer before you bring out your toolbox.

## Transferability and warranty

Some brands are very strict in saying they will only hand out a warranty to the first owner of the product. One of the reasons being that they assume that during the first purchase a user manual was included in the box that attempted to assure good use. If it is a second-hand product this manual is not always still included.

For many lights, even those which include a battery, a five-year warranty is listed on material and manufacturing flaws. However, this applies to the light and not to the battery. Some manufacturers don’t even hand out a warranty on the battery at all, others only six months.

This is because the battery is considered to be a consumer product. Like you also need vacuum cleaner bags to keep your vacuum working, you will need a battery to make your light shine. A vacuum cleaner bag won’t last forever, even though you occasionally empty it. The same applies to a battery. On average you charge a Li-Ion battery 500 times, after which it is basically done. The way you handle a battery also determines how well it keeps working. Whether you charge it completely and completely empty it. Or if you leave it out empty too long, or consequently overcharge it in a faulty charger. Do you store it in a hot environment or a really cold one? These types of things cannot be checked in case of a warranty claim. So keep in mind that batteries are almost never covered by the warranty.

## So many different opinions, what about names?

In this article we have talked about many different views amongst different manufacturers. It would make sense to say: but what are the names of these manufacturers? We will not say. Mostly because it would mean that this page would never be up-to-date. ## Casseroles with a special lid


Staub’s casseroles are enhanced with a special lid. On the inside of this flat contoured lid you will find little spikes shaped like drops. When you are cooking the moisture will fall back into the pan via these spikes. Because they are so evenly distributed over the surface of the lid the moisture will also evenly fall back into the pan, instead of dripping down via the rim of the pan. As a result over 9 times as much moisture returns via the middle of the pan giving your dish additional flavour. Because of the weight of the lid which perfectly seals off the pan at least 10% extra moisture will not escape the pan!


Staub has raised the edge of the lid on the outside so you can place ice cubes on it. You can do this to speed up the condensation process. While cooking, you can also put your utensils on top of it which is really convenient. The button on the lid is resistant to temperatures up to 250 degrees Celsius, so it can go inside the oven as well!


## Grill pans for delicious meals


In addition to casseroles Staub sells grill pans made from solid cast iron. A heavy-weight material which evenly distributes, and retains the heat. The pans can be used on any type of heat source, you can even pop it in the oven. In addition, changing the heat source is not a problem. ## Majolica-email: shiny, intense deep colours


Using the so-called majolica-email technique, Staub creates a deep intense email colour with a high gloss. Each pan is covered with three layers of enamel. The first is a base coating which covers the cast iron. The second layer gives the pan the desired colour and the last layer provides the high gloss with contrasting nuances.


## The production process


The molten cast-iron is poured in a sand mould. Each mould is used only once so every pan is truly unique. Excess cast-iron and other imperfections are removed after the pan comes out of the mould. After that the pan is prepared for the email layers. After applying the layers the pan goes inside an 800 degrees Celsius oven for 30 minutes. The result is a rock-solid pan that will last for generations!

## Features of Kai Shun santokus 

 

### Kai santoku knife: blade shape 

You can recognize a santoku by its high blade where the spine of the blade only tapers towards the tip at the end of the blade. Some of Kai's santokus feature grooves in the blade or a Tsuchime-hammered finish. This finish looks great and is also practical, as ingredients are less likely to stick to the blade. 

 

### The edge of the knife and cutting technique 

The straight edge of the santoku lends itself nicely to the push cut technique. You use a pinch grip for this. This is a technique where you clamp the beginning of the blade between your thumb and index finger. Since you hold the blade close to the handle, you have a lot of control over what you're cutting. You cut with a diagonal movement from back-top to bottom-front. After each cut, you lift the blade and return it to the starting position. Practice this technique to become a pro! The tagine is suitable for all different heat sources, including oven, induction and all-electric stoves. When using an oven (if the tagine fits), the condensation will not flow back into the dish, because the lid will be as hot as the bowl.

## Cooking with a tagine

Cooking with a tagine is a real treat. It does require some preparation and patience. A tagine can be used for stews and single-pan dishes. In other words, slow-cooking. Cook everything on low to medium heat. By letting your dish simmer for a long time, the meat will be very tender and the spices will be completely absorbed. You can also use a tagine on an open fire. However, it will be more difficult to maintain a steady temperature. The amount of moisture is very important. Don't add too little, but definitely don't add too much. The water will vaporise, rise in the cone-shaped lid, and then flow back into the dish. You barely lose any water. You can also serve your dish in the tagine: it looks beautiful on the dinner table!

## Avoid temperature differences

Never expose the tagine to high differences in temperature. This will cause the pan or the cone-shaped lid to crack. As such, you should never put your hot pan directly under a cold tap. Additionally, you should avoid putting ice-cold products in a warm tagine. But most importantly: never put the tagine in a pre-heated oven. Put the tagine in the oven while it is heating up. This allows the tagine to warm up gradually.

## Features of LionSteel M7 knives 

### LionSteel M7: blade 

This large knife is a heavy one! The blade of Sleipner steel has a 5.5 mm thick spine. Combined with a hardness of 60-61 HRC this knife can endure the heaviest circumstances. Sleipner is a type of updated version of D2 steel. A tough type of tool steel that is quite stainless, but still has difficulty with salt, acids and long-term exposure to moisture. Clean it after use, and occasionally add a couple drops of oil. 

 

### LionSteel M7: handle 

The M7 has a full-tang construction and a micarta handle. The handle is large enough for your entire hand. They made space for your index finger to be able to control the knife better. A superficial milled pattern in the micarta improves the grip but it also gives the knife a special look, one that is typical for LionSteel knives. Unique for this knife is that the handle is milled from one piece of micarta. Usually, two individual parts are screwed against the knife, but for the M7 the blade actually falls into the micarta.

The M7 comes with a kydex sheath. The kydex is secured with 8 screws on a solid Cordura base that is MOLLE compatible.

## Features of the Kizer Sheepdog 

The blade-to-handle ratio stands out. The Sheepdog features a hefty blade, making the knife resemble a cleaver. In spite of its size, the knife has a smooth action and opens with the flipper. The models that do not have a flipper, feature a thumb hole for opening instead. 

The Kizer Sheepdog is one of the most popular models from Kizer, and different models are available. There's a Mini version, for example, as well as an XL version. The Mini has a blade size of 6.9 cm compared to a 10 cm blade on the XL. 

Across the entire range, multiple types of steel are used for the blades. For example, 154 CM, a good stainless steel that is easy to sharpen yourself. Premium steels such as CPM S35VN are also used, a steel that retains its sharpness for a long time and is corrosion resistant.

## Using a karambit


You can use the karambit in different ways. The thumb through the thumb hole and your fingers on the cut-outs is what we call the 'reverse grip'. If you stick your little finger through the thumb hole and place your thumb on the spine of the handle you end up with the 'conventional grip. Whichever grip you choose: you will always have a sublime grip over the knife!


## Opening the karambit


There are also various ways of opening the knife. Most Emerson and Fox karambit knives are enhanced with a hook on the spine of the blade. With it the karambit will open automatically when you take it from your pocket. You can also open the knife with a flipper or thumb hole.

The blade of a boning knife has a length of 10 to 19.5 cm. The size you'll need depends on the kinds of meat you generally cook. These blades are very thin and flexible, allowing you to accurately remove the meat from the bones. The blade has a straight spine, smooth edge and a sharp tip. 

 

### How to choose the best boning knife 

First consider what you'll want to use the knife for: do you want to cut through larger pieces of meat, or rather a smaller piece of meat with precision? For the former, you use a rigid blade, while accuracy requires a more flexible one. 

 

A boning knife may look a lot like a filleting knife, however, there are some differences. For example, a filleting knife is more often used for delicate fish and a boning knife is more generally used for hard pieces of meat. That's why most boning knives are less flexible than filleting knives. The shape of the blade can also differ between filleting knives and boning knives. ## How to maintain your boning knife 

It is important to always keep your boning knife sharp and well-maintained. This ensures that your boning knife can cut through large pieces of meat with ease. Always remember to wash the knife by hand after each use. Use a mild detergent and a soft sponge when cleaning. The knife should be completely dry before you store it. 

 

We always recommend washing your kitchen knives by hand. Heat and harsh detergents in a dishwasher can damage your boning knife. 

 

### Sharpening a boning knife 

Extend the lifespan of your boning knife by sharpening it regularly. How often you need to sharpen the knife depends on how often you use it. Do you use it sporadically or on a daily basis? As a general rule of thumb, recommend sharpening once every 3 to 6 months. Of course, the sharpness of your blade is the main indication on when to sharpen it. Is it getting harder to remove tendons and bones? Then the knife is probably in need of a sharpening.

A convex grind is difficult to produce in large numbers. For that reason you hardly ever come across it on production knives. And yet [Fällkniven](kato://content/migrated_pageid_321) has successfully done so for over 20 years. Quite the achievement.


If you carry out more detailed work with a knife with a convex edge you will immediately notice the difference. Take, for instance, feather sticks. You will notice that you can cut the curls more evenly.


There are, of course, also 'downsides' to the convex grind. Some people find it a lot harder to sharpen. After all, you sharpen a 'convex' edge, and not a flat v-edge. The solution is stropping. In doing so you keep the convex grind sharp, without having to sharpen it too often. If the knife has become dull, you can use sharpening stones to sharpen a great convex grind, or you can use a sharpener such as the [Work Sharp Ken Onion edition](kato://product/WSKTS-IKO-UK), which naturally leaves you with a convex edge.


## Where are Fällkniven knives made?


In contrast to what people might think, Fällkniven knives are made in Japan. For years Fällkniven has been doing business there with the best knife makers the city has ever known. The fixed knives are produced by Hattori. Here, they apply the convex grinds by hand. The folding knives are made by Moki, a very prominent party when it comes to stunning gentleman's knives.


## Difference Fällkniven F1 and F1 Pro


For years the conventional Fällkniven F1 was the standard. And today it is still one of the best and most popular outdoor knives on the market. Fällkniven, however, decided in 2015/2016, twenty years after the original release of the F1, that it was time to produce a modified version of the F1: the Pro collection.


The most important differences between the two are the type of steel, the guard, the size of the handle and the scope of delivery.


### CoS vs VG10


One of the main differences is the type of steel. The F1 is made from laminated CoS steel, and the F1 Pro is made from laminated Elmax steel. Let's start with lamination: this means that there is a core of good and hard knife steel, laminated in between two layers of softer stainless steel. As such the blade is stronger and tougher, while the edge is still very hard.


Originally, the F1 was made from VG10 steel and the F1 Pro was made from CoS steel. VG10 is stainless and easy to sharpen. It retains its sharpness well and can definitely handle its own. A great type of steel for an all-round outdoor knife. But Fällkniven felt they could do better.


For that reason they started testing CoS-cobalt steel for a couple of years. Still stainless and relatively easy to sharpen, but CoS will retain its sharpness even longer and can definitely handle its own. On a chemical level VG10 and CoS are not that different. However, we suspect that CoS has a finer grain structure. Just like the difference between a 'normal' type of steel and a powdered type of steel. As such it will retain its sharpness longer and can handle a lot more.

Meanwhile, Fällkniven has continued using CoS steel in the production of the F1 and the steel of the F1 Pro has been upgraded to Elmax steel. Böhler Elmax is a fine and tough steel from Austria. Elmax stays sharp for a really long time but is also easy to sharpen yourself. Elmax is also very corrosion resistant.

Not only the type of steel is different about the F1 Pro. The thickness of the blade and the included grind are also different. The Fällkniven F1 has a 4.3 mm thick blade. The F1 Pro has a 4.9 mm thick blade. As such it feels a little more robust. Because of the lower grind the knife also has more 'spine' left to absorb the heavy loads. The F1 Pro is better suited to handle more serious cutting work.

## A lid for every pot


The most distinctive difference can be found in the lid. The [Staub](kato://content/migrated_pageid_244) casseroles all have a special lid. A flat contoured lid with a raised edge and little spikes on the inside that are evenly distributed over the surface of the lid. Because they are so evenly distributed over the surface of the lid the moisture will also evenly fall back into the pan, instead of dripping down via the rim of the pan. As such your dish will taste better. Furthermore, if you want to speed up the condensation process you can put ice cubes on the flat lid.. Because of its weight the lid perfectly seals off the pan.

## Asparagus pan


An asparagus pan is size-wise, of course, catered to the dimensions of asparagus. It's a high narrow pan with a basket and a lid. The basket will help you get the asparagus from the pan without damaging them. You can also use the pan for cooking spaghetti. Do make sure the basket has a fine enough insert for spaghetti.


## Au bain marie-pan


You would use this pan when you want to warm up a dish very slowly. The pan sits in hot water (Au bain marie literally means ‘in bath with Marie’) and there is no direct contact between the pan and the heat source. This is ideal for dishes and products that stick or cook too quickly normally like, for instance, chocolate or milk. Warming the product goes evenly and controlled.


## Baking tray


A baking tray may not be a classic pan, but is very convenient because many large dishes can be made on the tray. The metal plate, which can come in many shapes and sizes, warms your dishes. With or without non-stick coating, it is suitable to go in the oven or can go on a different separate heat source. Large baking trays are often used professionally.


## Blini pan


Blinis are small pancakes. A blini pan is a pan that optimized for baking these Eastern European pancakes. It can be a small frying pan, or a larger pan with several spots to be able to bake more blinis at the same time.


## Casserole


A casserole is used for stews. It is important that the heat is spread well. Often a casserole is made of cast-iron or steel. The material takes in a lot of heat and releases it slowly. Ideal for a stew when you don’t want a quick and high spike in heat.

## Cataplana


A cataplana is named after the dish you prepare inside it. The dish is a stew with shellfish. A cataplana is a kind of double wok that you can hermetically seal off. The best thing is to open the Cataplana on the table so all your guests immediately smell the dish.


## Clay pot cooking


Thanks to the pottery the clay pot looks traditional and definitely is traditional! For decades the clay pot is used to slowly cook dishes with a minimum of moisture. This will help keep vitamins and minerals inside and retains the taste as much as possible. Keep in mind a clay pot is fragile and must be handled with care and you should avoid large temperature differences. Putting a hot clay pot on a stone or steel surface can even be detrimental. If necessary use a trivet or tea towel to place on the clay pot and the risk is gone.


## Cocotte


A cocotte is a small fireproof dish with a lid, intended to prepare and eat food out of. In many cases they look decorative. Translated from French, Cocotte means "stew pot". They can be made of pottery as well as cast-iron. They even come in 1 person sizes.


## Contact grill


A contact grill is a complete device for grilling meat. Often equipped with convenient features to warn you if your meat or fish is cooked. In many cases cleaning it takes much more time than cleaning a griddle. In a list of cookware this is more or less the odd man out.


## Cooking pot


The foundation of cookware set is formed by a number of pots and pans. These are straight pans with a lid to prevent loos of moisture and heat. A cooking pot has two handles that are screwed, riveted or welded to the pan.

## Crêpe pan


A crêpe pan is intended for making the thin pancakes called crêpes. You can cook it in a regular frying pan, but the crêpe pan has the advantage that the edge is very thin so you can flip the pancakes easily with a spatula. Obviously, regular pancakes can also be baked in a crêpe pan. The pans can come with and without non-stick coating available.


## Deep fryer


A deep fryer is a pan in which oil is heated to about 180-200 degrees Celsius. A metal basket contains the product inside oil. Mostly this pans is used for chips and the like.


A deep fryer can be placed on a heat source or have a built-in heat source. Generally, for use at home there is an electric heating element inside the fryer, while a professional chefs can also have a large gas-fired fryer. Frying pans are the main source of fire and burns inside the kitchen, so be careful!


## Dutch Oven


A 'Dutch oven' is a sturdy casserole which is traditionally made out of thick cast-iron. A real Dutch oven can also but put straight above fire. You can hang it or put it on legs over burning briquettes. The models made of clay are mainly used for preparing meat and stews. How great is it you can do this outside as well!?


## Fish pan


A fish pan is shaped to make it easier to bake a fish. In many cases it is oval to follow the exact shape of a fish and the evenly distribute heat. The edge is not that high so a bigger fish’s tail will fall slightly over it.


## Fondue pan


The diameter of a fondue pan is usually not too big so the fondue forks can sit nice and deep in the cheese, oil or broth. If you are really naughty, this can also be chocolate! The pans have a small brim on the top to prevent splashing. Fondue pans are made pottery or metal and can be equipped with a glaze or non-stick coating. Often they are part of a fondue set where the heat source is a gas burner or electric heating.


## Frying pan


Frying pans are low and have a long handle. Large frying pans sometimes have a second grip which makes them easier to handle. Depending on the material a frying pan can be pretty heavy. Frying pans often have a non-stick coating.

## Griddle


A griddle is similar to a grill pan. The surface is often bigger and it doesn’t have a single handle, but has handles on both sides. This is really convenient in case you want to put it in the oven.


## Grill pan


Grilling meat, fish or vegetables obviously goes well in a grill pan. Grilling is done at a high temperature which sears the meat and keeps al the juicy niceness inside the product. The moisture that does flow out stays in the ridges of the grill pan. Some grill pans have a removable handle so they can be put inside an oven. Cast-iron is very suitable as material for a grill pan. It is resistant to high temperatures.

## Jam pan


A jam pan is also called maslin pan. They are often made of copper and therefor have a good heat distribution. The relatively high edge is slanted so you can stir without splashing over the edge.


## Juice pan


A juice pan is ideal for owners of large gardens with fruit trees. You can process all kinds of fruit to delicious fruit juice. Because the juice is taken from the fruit by steam, the result is a sterile fruit juice that can last very long. The bottles that are used for bottling must be perfectly clean.


## Milk pan


Milk tends to burn quickly. A milk pan has a good heat distribution and can have a non-stick coating. It is related the saucepan, except its side is straight right. A milk pan has a handle and sometimes there is a spout (or even two) to pour without making a mess.


## Mussel pan


A mussel pan has to be large because a large part of the mussels end up as waste. Also, because the mussels open during cooking there has to be a little more room. A mussel pan has a high lid and can be made out of different materials.


## Paella pan


Most pans are named after the dish that is cooked inside it, but it is the other way around with this one. The Latin name for pan is ' patella '. This has slowly changed to the Catalan/Valencian word 'paella'. A paella pan is often associated with cooking for large groups, but they also come in smaller sizes.


The perfect rice for paella absorbs a lot of moisture which, along with the flavour, attaches itself to the rice. A paella pan is low and wide because the rice has to stay close to the bottom to get that nice taste. For that reason the pans for larger groups are wider and not higher.


## Pasta pan


Pasta can be cooked just fine in a regular pan. However, a separate pasta pan is a nice addition to the kitchen inventory. A pasta pan consists of a pan containing a colander. The lid fits both on the pan and the colander. You don’t need the drain because you simply remove the colander from the pan. It can also be used as a steamer for vegetable.


## Pressure cooker


A pressure cooker is a cooking pot with a lid that can close the pan off hermetically. The pan comes under pressure as soon as the water boils. The pressure can often be set on a few different levels. A pressure release valve ensures that the pressure never too high. Safety comes first.


Cooking under high pressure goes much faster than normal. You save up to 70% of the cooking time. Very advanced pressure cookers like the Fissler can be equipped with a digital timer that can give exact updates on the cooking process via the app.

## Rice cooker


A rice cooker might not be essential, but is very useful for rice lovers. You cook the rice in a controlled environment without it being too dry or mushy. You can keep it warm inside the cooker as well, should you want to eat it later. Because a rice cooker has a heating element inside it you don’t need an extra spot on your stove.


## Roasting pan


A roasting pan is also called a casserole. The heat is distributed evenly. A cast-iron or steel pan can take in a lot of heat on and transfer it gradually. This makes it ideal for braising. The most famous roasting pans are the cast-iron ones from Le Creuset.


## Roasting tin


A roasting tin is usually used to roast meat, poultry or venison in the oven or on a stove. In general they are quite large rectangular tins. Make sure when you buy one that it is not too big for your oven!

## Saucepan


A good even heat distribution is important when cooking in a saucepan. That is why copper pans are popular as saucepan. These pans always have a handle. The bottom saucepans are nicely rounded. Stirring is very important, that’s why in many cases they have a sloped edge so working a whisk is easy.


## Sautée pan


The sautée pan is related to the frying pan. The difference is the side of the pan. A sautée pan is always useful for quickly warming up leftovers. They have a long handle and often a lid so you can braise, simmer or keep dishes warm. These pans often have either a teflon or ceramic non-stick coating.

## Serving pan


A serving pan is used to prepare a dish and present it in. In some hotels and restaurants the final piece of preparation has to be done at the table. Because the pan is put on the table there is often a wooden board underneath it to protect the table. Serving pans generally have a lower edge with two handles. They can, for example, be made out of steel or cast-iron. A non-stick coating is often not used because it doesn’t go well with cutlery.


## Simmering pan


A simmering pan is made to slowly cook food just like a casserole or roasting pan. The cast-iron pans by Le Creuset are ideal because of their high heat absorption and slow heat transfer.


## Skillet


A skillet is a frying pan with a slight edge on them. They are also called omelet pans. The edges make it easy to stir or turn the omelet. The flip side of the edge is that the effective area to use for cooking is smaller than that of a pan of the same diameter with a straight edge.


## Slow cooker


You should not be in a hurry with a slow cooker. At a low temperature over a longer period of time a dish is cooked. The advantage is that the nutritional values are preserved and there is hardly any fat used. The result is very tasty and healthy!


A slow cooker consists of a ceramic inner pot in a heated container on the outside. It’s simple in use, but takes a long time!


## Small pancake pan


A small pancake pan is traditionally a round plate of cast-iron with small dents where the pancakes can be baked in. The pan can also be made cast-aluminum or steel sheet. They are not always round. For commercial use there are huge plates for sale as well.


## Smoke pan


It used to be that smoking food was done to preserve the food better. Nowadays it is mainly a way to make it taste great. Wood chips, which can also be seasoned, are heated in a closed pan until they start smoking. The product, for instance salmon or sausage, is totally surrounded by smoke. For bigger products or larger quantities there are cabinets available but in a private kitchen a smoke pan will suffice.


## Steam cooker


A steam cooker is a pan in which dishes can be steamed. In other words, they are cooked in the steam from boiling water. How it’s done varies. A real steamer is specially made for this purpose and consists of two separate compartments. The bottom holds the water and the top your food. There are also steam trays for pressure cookers. The main advantage is that vitamins, minerals, and of course taste is held better. The preparation time can be longer but you don’t need a lot of water to start steaming.


## Stock pot


A stock pot is a large sauce pan with a high edge and a large diameter. It is great to cook a big amount of soup in. A stock pot has a lid and two handles. Due to the large dimensions it is very useful during a family weekend!


## Tagine


From the North African cuisine the Tagine has made it into our kitchen. The Tagine is an cooking pot made out of pottery. It has a very high lid and characteristic chimney-like top. This allows steam to escape and the food in the tagine to be steamed evenly. Condensation continually falls back inside during preparation. The taste of the food remains optimal. You can cook meats, fish and vegetables in it. Best part is that you can serve the dish inside the Tagine as well!


## Wadjan (wok pan with double handles)


Originating in Indonesia the Wadjan, or wok pan with 2 handles, looks very similar to a wok. A Wadjan has two handles while a wok has a single long handle. Traditionally, food in a Wadjan is prepared over a longer amount of time, while stir-frying in a wok goes faster. Although there is a notable difference between the regular wok pan and the Wadjan, the terms are used interchangeably.


## Wok pan


The wok pan comes from Asian cuisine. The bottom is shaped to fit on a big wok burner. You always use a wok pan on high heat. This is why the wok burners are so great to us. A wok can also have a non-stick coating and a lid. The handle of a wok is long to handle the larger weight. For the same reason, they can also often have a second handle.

Why that many different pans?

UK knife law allows you to carry non-locking pocket knives with a blade length up to 3 inches (7.62 cm) without any need for a valid reason.


You are allowed to carry a knife which exceeds these guidelines in public, but please remember: you will do need a good reason to carry it. Gov.uk has the following to say on good reasons to carry a knife:

## Abuse is still illegal


Also remember that using any knife (legal or illegal) in any threatening way, is also illegal. So using your (legal) Swiss Army knife in any threatening way is still illegal.


## UK Friendly

## Knife-free zones


There may be zones where you are not permitted to carry any knife at all, regardless of size or locking mechanism. As you may understand this often is the case in football stadiums, bars, clubs, city centres and other crowded places.

* samurai swords (with some exceptions, including antiques and swords made to traditional methods before 1954)
* hand or foot-claws
* push daggers
* hollow kubotan (cylinder-shaped keychain) holding spikes
* shuriken (also known as ‘death stars’ or ‘throwing stars’)
* kusari-gama (sickle attached to a rope, cord or wire)
* kyoketsu-shoge (hook-knife attached to a rope, cord or wire)
* kusari (weight attached to a rope, cord or wire)
* machetes
* zombie (style) knives*

The definition of a zombie knife has changed since 24-08-2024:

A **zombie style knife** is a bladed weapon with:

* A plain cutting edge
* A sharp pointed end, and
* A blade of over eight inches long

Which also has one or more of the following:

* A serrated cutting edge over two inches long
* More than one hole in the blade
* Spikes
* More than two sharp points in the blade

## Sal Glesser: the early years


Sal was born in June 1943 in Brooklyn, New York, United States. As a school boy he discovered that he could add a sharp edge to a railroad spike (a nail that is used to secure railroad tracks), by sharpening it on the edge of the kerb. A great tool to make sure you and your lunch money could safely arrive at school in the poor areas of Brooklyn of that time.


In the seventies Sal and his wife Gail travelled the country visiting market after market. In a converted baker's van, towing a Volkswagen Beetle. They produced and sold small tools. From a type of spider-like clamp with multiple arms, great for jewellers and electricians when soldering, to knife sharpeners. His interest in sports cars led him to the name Spyderco. The large brands namely all had sports cars named Spyder of Spider. You could say that the oldest, still active Spyderco product is the Sharpmaker. Even though, throughout the years, the design evolved.

## Three new Fiskars Norden axes


The Fiskars Norden N7 is a small and universal axe that is great for pruning, felling and making kindle. ## What is a gut hook?

This hook is designed to cut open the belly of freshly shot game. A gut hook ensures that this task is a lot safer. It ensures you don't slip and end up piercing the intestines. ## Features of the SpyMyto

The SpyMyto features a blade made from M398 steel, an improved version of Böhler-Uddeholm's M390, known for its exceptional hardness and abrasion resistance. ## 1. Blade


The blade is the most important part of a knife. The quality of the blade determines the quality of the knife.


A: The tip: we call the end of the blade the tip;  

B: Cutting edge: the cutting edge, also called the edge, is the sharpened part of the blade;  

C: Spine: we call the thick, blunt top of the blade the spine.


## 2. Crop


The crop, also called the knife guard, is there to protect your hand. There are many knives with a crop that run towards the heel. Japanese knives are usually not enhanced with a crop.


D: Heel: the heel is the last part of the edge. To protect your fingers the heel often isn't sharpened.


## 3. Handle


The handle is the part of the knife you use to hold it. The handle needs to feel great in hand. This depends on the design and the materials used.


E. Rivets: some handles are secured with rivets for a classic look and feel. The rivets keep the two parts of the handle together;  

F. Pommel: the pommel is the final part of the handle. The pommel takes care of the balance. If a knife is enhanced with a heavy blade the pommel is often made from metal to counterbalance the weight of the blade.


## 4. Tang


The [tang](kato://content/migrated_topic_405) is the elongated part of the blade where the handle, the crop and the pommel are mounted on. That is when the tang runs all the way to the pommel.
