When it comes down to a steel type 'good' is of course relative term. A steel type is as good as it adheres to the demands of the user. So how does that pan out for Sandvik 14C28N? Sandvik 14C28N was developed to offer a proper balance between sharpness retention and corrosion resistance. And that is exactly what it does! Sandvik 14C28N retains its sharpness well and thanks to the addition of nitrogen and chrome it can also handle its own when it comes to corrosion. As such you can easily use this type of steel in humid or maritime surroundings, or for food-prep. It is also good to know that Sandvik is easy to sharpen thanks to its fine grain structure.

Many types of steel are used to produce fixed knives. But which steel type is better? First and foremost, this depends on what you are looking for. However, if you do want to make a comparison: Sandvik 14C28N is similar to AUS-8, 8Cr13MoV and Sandvik 12C27. 

### AUS-8 
AUS-8 is a Japanese stainless steel. Its chrome content is similar to that of Sandvik 14C28N, but it has a higher carbon content. As such it can handle corrosion well and is easy to sharpen. It will, however, lose its sharpness a little faster. 

### 8Cr13MoV 
8Cr13MoV is a Chinese stainless steel with a similar chrome content, but a higher carbon content. It also contains extra elements such as molybdenum and vanadium. The result is a steel type that performs well, for a lower price. It does, however, need to be sharpened more often. 

### Sandvik 12C27N 
Sandvik 12C27N is a top-quality stainless steel produced by the Swedish company Sandvik. It offers a good balance between hardness, toughness and corrosion resistance.

## Casseroles with a special lid


Staub’s casseroles are enhanced with a special lid. On the inside of this flat contoured lid you will find little spikes shaped like drops. When you are cooking the moisture will fall back into the pan via these spikes. Because they are so evenly distributed over the surface of the lid the moisture will also evenly fall back into the pan, instead of dripping down via the rim of the pan. As a result over 9 times as much moisture returns via the middle of the pan giving your dish additional flavour. Because of the weight of the lid which perfectly seals off the pan at least 10% extra moisture will not escape the pan!


Staub has raised the edge of the lid on the outside so you can place ice cubes on it. You can do this to speed up the condensation process. While cooking, you can also put your utensils on top of it which is really convenient. The button on the lid is resistant to temperatures up to 250 degrees Celsius, so it can go inside the oven as well!


## Grill pans for delicious meals


In addition to casseroles Staub sells grill pans made from solid cast iron. A heavy-weight material which evenly distributes, and retains the heat. The pans can be used on any type of heat source, you can even pop it in the oven. In addition, changing the heat source is not a problem. ## Majolica-email: shiny, intense deep colours


Using the so-called majolica-email technique, Staub creates a deep intense email colour with a high gloss. Each pan is covered with three layers of enamel. The first is a base coating which covers the cast iron. The second layer gives the pan the desired colour and the last layer provides the high gloss with contrasting nuances.


## The production process


The molten cast-iron is poured in a sand mould. Each mould is used only once so every pan is truly unique. Excess cast-iron and other imperfections are removed after the pan comes out of the mould. After that the pan is prepared for the email layers. After applying the layers the pan goes inside an 800 degrees Celsius oven for 30 minutes. The result is a rock-solid pan that will last for generations!

Cast iron takes a while to heat up, however, it retains its temperature for a long period of time. Black cast iron lids tightly seal off the pan, making sure you will never lose the flavour of your dish.

## Enamelled cast iron

Because cast iron itself requires quite a lot of maintenance to keep it in great shape, it is often enhanced with enamel. Simply put, enamel is a thin layer of glass which means it has the same function as a regular non-stick coating. Not only does this layer make cleaning a lot easier, the vibrant colours look amazing.

An enamelled cast iron pan does not need to be burnt in. This is because the enamel layer already acts as a non-stick layer. However, a pan without enamel creates a natural non-stick layer over time, something an enamelled pan does not do. There is always the possibility that the enamel could break.

## Cast-iron pans without enamel

Of course, it is possible to purchase cast iron pans that do not have an enamel finish. In this case, the pan needs extra attention. For example, it is important that you never put the pan away wet, as it could rust. It is wise to add a drop of oil to the pan as soon as it is washed off. Carefully spread this out over the entire surface. Then the pan will stay beautiful for a longer period of time. 

Over time, the pan creates a natural non-stick coating. The oil adheres better to a pan without enamel, which makes this natural non-stick coating better.
