This sharpening stone is intended for use in an Edge Pro sharpening system. The grit size cannot be directly compared to the grit size of Japanese water stones. See the attached table.

If I have a dull knife this is my go to stone. There is enough grit to reshape most bevels or edges depending on how you are sharpening but not so much that it will eat metal. I would only go lower than this grit if the edge was totally blown on a blade and I needed to shift a lot of metal. The quality of these stones is amazing and after 15+ years of using them on an Edge Pro Professional unit I would never consider anything else!
