This **Eden Kanso Aogami chef's knife** is a real all-rounder. Because of the length and height of the blade, this knife is great when cutting meat, fish, vegetables and fruit. It's also ideal for chopping herbs, crushing peppercorns and peeling garlic cloves. This chef's knife is a part of the Kanso Aogami collection: a complete range of stunning Eden kitchen knives. Made with only one purpose: to provide ultimate cutting performance! 

## Blue Paper Steel blade

This 20 cm Japanese chef's knife was forged by hand and made from Blue Paper Steel. Blue Paper Steel is White Paper Steel with the addition of small amounts of chrome and tungsten. It might make the steel a little less traditional but it does improve the qualities. Blue Paper Steel is more resistant to corrosion and chipping than White Paper Steel, although it is certainly not a stainless steel type.

## Classic Japanese handle

The classic red sandal wood handle is asymmetrical. As such it feels great in hand. The shape of the handle is perfect for left-handed use. This doesn't mean, however that it cannot be used by right-handed users. I will only be a little less comfortable to use.

## Sharpening Eden Kanso Aogami kitchen knives

Do not sharpen these knives with a pull-through sharpener. Because of the hardness of the steel and the sideways movements that are made with a pull-through sharpener pieces of the edge can namely break off. That is why we recommend sharpening these knives by hand on a sharpening stone, sharpening steel or with a sharpening system.

My only concern with this range of knives are that they discolour really easily! It's a pity they are not made in stainless steel? I would also lime the range to include a small meat chopper for left handed people?
