Three men - William B. Ensworth, Charles Albert Brace and William Maudsley - founded the company in 1889 in picturesque Naples, New York. The company's name comes from Ontario County. Originally, knives were made by water power on a sharpening stone and sold from a wheelbarrow in the area. 

 

As the company grew, more space and energy became a necessity. An old mill in Cadiz, near Franklinville, was bought and powered by hydropower from the Ischua Creek. ## A good casserole


A casserole usually has a round or oval shape. The pans are large. That is necessary to make sure large pieces of meat have enough room in the pan. Most casseroles are enhanced with two handles to make sure you can easily lift the pan. It is important because most casseroles are heavy, especially the cast-iron versions.


A good casserole is made from thick material to make sure the heat is properly distributed and retained. However, a good casserole shouldn't only be enhanced with thick walls, it should also come with a heavy lid. Otherwise the retained heat will still easily disappear because the lid is too thin. ## Roast, simmer and stew with a casserole


Roasting is also called stewing, braising or simmering. The products are first roasted on a high temperature after which they slowly cook at a low temperature. The temperature needs to remain below boiling point. Otherwise your dish will dry out. A casserole is in this case the best pan.

## Characteristic blade

You can recognize the Chinese chef's knife by its rectangular blade. The blade is approximately 18 to 20 cm long and 10 cm high. But don't be mistaken, these aren't cleavers! While the blade of a [cleaver](kato://content/migrated_pageid_53) is robust, the blade of a Chinese chef's knife is wafer-thin and razor-sharp. As such it cannot be used to chop through bones.

## Versatility

In the Chinese kitchen this chef's knife is often used because the height of the blade enables you to easily use your fingers as a guide as you're cutting your ingredients. It works safely and quickly and is very practical. You use a Chinese chef's knife to finely cut herbs and vegetables, but a Chinese chef's knife can also be used to crush garlic. With the high blade you can easily scoop the sliced vegetables or herbs into the pan.

### The right cutting technique

With a Chinese chef's knife, you use a cutting technique that is different from the technique used for European chef's knives. The Chinese chef's knife doesn't 'rock' back and forth on the surface but moves diagonally from back-top to front-down. The knife constantly remains in a horizontal position.

## Maintain Chinese chef's knife for a longer lifespan

Maintaining your kitchen knives is always a good plan: clean it them by hand after each use, oil the knives regularly and, above all, use a wooden or plastic cutting board. You can damage the knife by cutting on a hard surface, so it is better to grab a cutting board made of a softer material like wood. Regularly oiling the blade prevents rust from forming. And by cleaning the knife thoroughly after each use you will keep the knife free of any food residue, which prevents corrosion or staining. Use a mild detergent and a soft sponge when cleaning. The knife should be completely dry before you store it. Make sure to dry it well too, to prevent rust from forming.

### How to sharpen a Chinese chef's knife

Extend the lifespan of your Chinese chef's knife by sharpening it regularly. How often you need to sharpen the knife depends on how often you use it. Do you use it sporadically or on a daily basis? As a general piece of advice, recommend sharpening once every 3 to 6 months. Of course, the sharpness of your blade is the main indication on when to sharpen it. Is it getting harder to remove tendons or cut vegetables with a tough skin? Then the knife is probably in need of a sharpening.

## Prototyping and milling bits


Were you able to produce a working fixture? If so it is time to start producing and testing prototypes with different tools. Used a milling bit too long? You will see it when you look at the finish of the tool. A part of the finish is therefore determined by how often the bits are replaced. A bit can be cheap, but also pretty expensive. Usually a bit is used for milling away material and another for the finish. Often another very fine bit carefully moves over the surface for that nice finish. Might take a lot of time, but it is definitely worth it.


## Finish after milling


In the end you are left with all the parts that were cut out with a CNC-machine. Done? No. They now namely have a surface finish directly from the milling machine. As such you cannot avoid the fact that every part needs to be finished by hand. Sanding, sandblasting, satinizing: whatever the knife needs.


## Cost of a CNC-machine


The CNC-machine itself also doesn't come for free. Modern CNC-machines that are used today can easily take you back 100.000 euros. Sometimes even more, depending on what the machine can do. That amount will be the basis. This does not include the additional costs of the accessories and spare parts. Cost of items such as cutters and coolant. Maintenance. Costs of a CNC-operator that will control the machine, and its (additional) training.


## Conclusion


So is it really that terrible working with a CNC-machine? Absolutely not. It is the only consistent way of shaping so many parts in 3D. And compared to cutting it out by hand with a saw, sharpening and milling parts it is, in most cases, even cheaper.


You do, however, need to know that it is definitely not cheap. And that it does require a great deal of craftsmanship. From drawing to fixture design and from prototyping to the actual production. It is not that simple.

We do have to say that he uses a relatively old model from the mid-nineties. Today CNC-machines are little more advanced, faster, and can handle a lot more. The basic principles, however, remain the same and you still need to know what you are doing.

## How did the Grailer 2 first see the light of day?


The Grailer 2 is the production version of the Findus design from Simen Stryckers. He is a young Belgian designer who has been producing amazing knives in his garage for years. ## The modern classic

The ESEE 4 is arguably one of the most recognisable and popular survival knives out there. Designed as a utility and field knife with a 4.1 inch (10.4 cm) blade of simple and robust 1095 steel, the ESEE 4 has stood the test of time. This knife has been used and abused by bushcraft enthusiasts and tactical practitioners alike. I think one of the reasons people always return to their ESEE knife is the trust they have in the products. Time and time again, we have seen the ESEE team testing prototypes and new blades on their own field trips and training courses, only for these products to appear on the market a year later. There is no denying that they extensively test their own creations, and it shows.

## Not just a survival knife

Back when I wrote my review about these new 3D milled models from ESEE, I spoke about all the things I love in their knives. The simplicity of 1095 steel when it comes to maintenance and sharpening. The improved ergonomics and handling options of the new handle shapes (based on the original design which was more square-shaped), and the tightly snug and sleek moulded sheath. All of these things are true in the ESEE 4\. But this model feels even more comfortable to me than the 3 and the 6 models. The ESEE 4 sits in the Goldilocks zone in terms of weight and blade length, and I think this size appeals to not just survival enthusiasts, but also bushcrafters.

This blade is just about the perfect length for both intricate knife work and for heavy duty camp maintenance, such as firewood processing and shelter building. In Mors Kochanski’s Bushcraft about a man whose training combines bushcraft and survival skill, he talks about his knife and what he considers ideal.

> 'The general-purpose bush knife should have a blade as long as the width of the palm […] A blade 10 to 15 centimetres long will do intricate work like carving a netting needle, yet be large enough to present a good target for a baton when cutting down small trees […] The blade should be of good quality carbon steel, from two and a half to three millimetres thick and about two to two and a half centimetres wide […] The metal of the knife blade should extend for the full-length of the handle (a full tang) for strength. The handle should be a durable, water-resistant material that can be shaped to the user’s hand if necessary. The ESEE 4 is described by most as a survival knife first and foremost… But from the classic description above of the ‘ideal bush knife’, for all intents and purposes, this could be describing our ESEE.

### A tactical flashlight like no other

From experience I learned that a good tactical flashlight allows you to operate it even in stressful situations when fine motor skills often fail. This Fenix T22 TAC meets this requirement thanks to its tail switch. This tail switch is large enough that you can easily operate the light with gross motor skills. This is a big improvement compared to my previous flashlights, where I had to find a small button by feeling around for it. I have become familiar with the controls of the light, having used it both when training on the shooting range and during procedure trainings. Operating this flashlight has become second nature for me. Thanks to the mechanical design of the tail switch, you can actually feel what you're doing as you're doing it. The button also gives great feedback, so you're always in control.

### Perfect balance of light intensity

Like I mentioned before, not every situation requires the same amount of light. The Fenix T22 TAC offers the perfect balance. In the past, I've seen similar attempts at this balance from other brands, but in practice it never worked as well as expected. This flashlight provides a clear bundled beam of light that reaches a long distance, with a wider beam of residual light around its centre. This allows you to cast your light on a person, while at the same time being able to keep an eye on your surroundings. The problem with most wider beams is that you could blind your colleagues or bystanders. However, the Fenix's residual light beam is not blinding, so any colleagues close to you can safely continue to do their job.

## The Horace Kephart Inspiration


The man who put his name to this knife is Patrick Rollins (PR), an instructor at Randalls adventure and Training school, and the knife is the result of him designing and extensively testing the first prototypes over a number of months in survival classes, off-trail backpacking, hiking and camping. When it comes to wilderness chores, sometimes simple and straightforward is the best approach. And Patrick took his inspiration for the PR4 from the famous Horace Kephart sheath knife.
