Let’s start with a small introductory round. Who is this Joe Caswell? Joe Caswell is a famous American knife maker known for his innovative ideas and top-quality handmade knives. Ever since 1995 Caswell has been a full-time knife maker with quite the fan base. Not that surprising really. When you look at his knives you will be amazed by the interesting mechanisms and remarkable designs. This cooperation with CRKT gives anyone the opportunity to get their hands on a real Caswell design!


## The CRKT Provoke and the Kinematic technology


First things first, what is the Provoke made from? CRKT used D2 steel for the blade, a robust type of steel that retains its sharpness well. It is therefore also great to see that CRKT will use this type of steel a lot more in 2019. As some of you might already know, however, is that D2 is not the most corrosion resistant type of steel. Fortunately CRKT found the perfect solution for that! The blade has been enhanced with a titanium nitride finish to make sure the blade is extra corrosion resistant. This is not only incredibly clever, it makes the knife look incredibly bad-ass. The handle is made from aluminium and weighs next to nothing.


The best aspect of the CRKT Provoke is the Kinematic technology used to open the knife. Normally a karambit is a fixed or folding knife which closes. The Provoke is neither. The blade slides forward when opened. Incredibly innovative! But why select this mechanism in the first place? According to recent research our fast food sensitivity is a heritage from a distant past.  Our most primitive ancestors lived in an age where ‘survival of the fittest’ was part of everyday life. The brain of those living approximately 500 million years ago was thus designed to quickly respond to stimuli. It was, after all, to eat or being eaten: people constantly had be careful. Hence the term reptile brain: that part of the brain that primarily responds to input, even before you are able to make a well-informed choice.


The reason we increasingly consume so much greasy foods and sugars, even though deep down we are definitely aware of how it can affect our body, is therefore the result of our primal urge to survive. Our distant ancestors left us with a supply of fat just in case at some point in time there would be less or no food left. Today our reptile brain still thinks along the same lines even though there is no such thing as a shortage of food anymore.


## Dopamine


By feasting on unhealthy snacks our brain starts to produce dopamine. This substance causes us to experience a feeling of pleasure. However, similar to the effects of drugs that urge for fast food will only continue to grow. In the end you will need more and more fast food to experience that same feeling. An uncontrollable urge you can no longer escape starts to emerge. American research from 2012 already demonstrated that there is a large overlap between the response of the dopamine system on, on the one hand, eating a lot of (rich in fat and sugar) ice cream and on the other, drugs and alcohol. Of course, the extent to which this applies varies greatly from person to person.


## The solution!


If we, indeed, need more and more fast food it is perhaps a good idea to make the experience around the whole experience of eating a lot more fun. What if we enjoy making our food just as much as eating it? Is that perhaps how we could lessen that urge for pizza or fries? We believe that it is at least worth a try. ## Cutting with a santoku
The straight edge, and its benefits, influence how you cut with a santoku knife. It's worth noting that you will rarely only use the tip. Optimal use of the straight edge is the key.

### Correct positioning of your hands and fingers
The pinch grip is popular among professional chefs and amateur chefs. This is a technique where you clamp the beginning of the blade between your thumb and index finger. You fold the other three fingers loosely around the handle. Because you grip the blade close to the handle, you have lots of control over what you're cutting. This means you not only work more precisely, but you also prevent outliers and reduce the risk of hitting yourself.

Does this mean that grasping the handle with your whole hand is wrong? Absolutely not! This puts more power behind your cutting movement. This is beneficial when you're cutting large vegetables such as cabbage. But that much power is almost never needed for a santoku. Let the sharp, thin edge do its work and trust the cutting technique you're using.
