# What about the warranty?

Almost all products we sell are covered by a manufacturer’s warranty. However, how that warranty works and what the terms and conditions are can differ per brand or product. For that reason we love to tell you more about what we mean when we say warranty and what common exceptions and point of attention are. It may be a confusing amount of exceptions and differences so buckle up: here we go.

## What does your warranty apply to?

In nine out of ten cases you will receive a warranty on **material and manufacturing flaws** when you purchase a product. This means that if there is a defect in the product caused by a flaw in the material, or the manufacturing you are entitled to a warranty.

This also means that wear and tear never entitles you to a warranty. After a while each product will wear out, to a greater or lesser extent. This, however, doesn’t mean that the product or the manufacturer is to blame. Some products wear out faster because they are perhaps of lesser quality. As long as this is inherent to the product, and not an exceptional material or manufacturing flaw you won’t be able to invoke the warranty offered by the manufacturer.

## So what does warranty mean?

What a brand feels should be a part of a warranty differs as well. For instance, if a product breaks within the warranty period you are legally entitled to a repair or replacement. This means that a knife can sometimes be fixed and enhanced with a new blade or any other replacement part. Sometimes it means you will receive a completely new product. If the product is no longer produced the product can be replaced by a product of equal value. This is taken care of by the supplier or manufacturer.

Some manufacturers choose to replace the product with a refurbished product. This is a fixed and checked version of the product. As long as this product is of equal value as the product you sent in, the manufacturer may decide to do so.

## What about the warranty period?

Many products list a warranty period. Often a minimum of two years after purchase, up to life. Within that period you can claim the warranty offered.

It is important to know that for some products the conditions of the warranty differ from other products produced by the same manufacturer. Think of a bottle of oil or a tube of diamond paste for a strop. Fortunately these are also products for which the warranty is (almost) never claimed.

Some manufacturers can also decide to, for instance, offer a standard two-year warranty which they will extend to five years if you register online or send a postcard.

## What does life-long warranty mean?

What life-long warranty means differs per brand. While some brands consider life-long to be as long as the initial purchaser is still alive, some feel life-long actually applies without a limit. However, most common is that a warranty lasts as long as the expected life of the product.

There are American manufacturers who print a label saying ‘Lifetime Warranty*’ on the box. However, when you look up the star on the back of the box you will notice that life-long only means when you live in North-America, and that you ‘only’ get a 25-year warranty if you live elsewhere.

## Defects due to incorrect use

Sometimes something happens to a product because it isn’t correctly used. Defects caused by incorrect use are practically never a part of the warranty. Simply think before use if the product was intended for what you are about to do with it.

A favourite example is batoning with an outdoor knife where you cut or split a piece of wood by using a baton-sized stick to hit the spine of a knife. Yes, many knives can handle this. Some are even made for it. However, in the end it is a task which should be carried out with an axe.

We do have to state here that some brands give you a warranty on anything. No matter what you do with the product. These are, however, rare exceptions.

## Rust and warranty

Knives rust. That is a given. Even when a knife is made from ‘stainless’ steel it can still rust. It is, after all, not ‘stain free’. This is the result of external factors: moisture, acids or salt. Or a combination of the three. Think of salty sea air or fruit acids. Just clean and maintain your product well. You could, if need be, also use [Flitz](kato://product/FZ002) to remove the rust. It is never covered by the warranty.

## Modifications and disassembly

For many products the following applies: if you modify the product yourself your warranty will expire. Sharpening a knife is, of course, not included as it is necessary maintenance. But as soon as you start filing, painting, sanding, soldering, anodizing etc. your warranty will expire immediately. There are manufacturers who look at this a little more pragmatically: a small modification to the handle won’t affect the blade, which will make them lenient. But never assume they will be!

Disassembly could also lead to the warranty expiring. Think of the famous stickers on electronics: ‘Warranty void if seal broken’. It, however, really differs per brand how this is handled. First you should always check the website of the manufacturer before you bring out your toolbox.

## Transferability and warranty

Some brands are very strict in saying they will only hand out a warranty to the first owner of the product. One of the reasons being that they assume that during the first purchase a user manual was included in the box that attempted to assure good use. If it is a second-hand product this manual is not always still included.

## Batteries and warranty

When it comes to batteries things are slightly more complicated when it comes to warranties. For many lights, even those which include a battery, a five-year warranty is listed on material and manufacturing flaws. However, this applies to the light and not to the battery. Some manufacturers don’t even hand out a warranty on the battery at all, others only six months.

This is because the battery is considered to be a consumer product. Like you also need vacuum cleaner bags to keep your vacuum working, you will need a battery to make your light shine. A vacuum cleaner bag won’t last forever, even though you occasionally empty it. The same applies to a battery. On average you charge a Li-Ion battery 500 times, after which it is basically done. The way you handle a battery also determines how well it keeps working. Whether you charge it completely and completely empty it. Or if you leave it out empty too long, or consequently overcharge it in a faulty charger. Do you store it in a hot environment or a really cold one? These types of things cannot be checked in case of a warranty claim. So keep in mind that batteries are almost never covered by the warranty.

## So many different opinions, what about names?

In this article we have talked about many different views amongst different manufacturers. It would make sense to say: but what are the names of these manufacturers? We will not say. Mostly because it would mean that this page would never be up-to-date. For that reason we always recommend to always visit the website of the manufacturer in case of a defect to see what type of warranty conditions they adhere to. After all, these may be subject to change.

## SHIPPING AND SHIPPING COSTS

We keep stock at KATO Group's local warehouse in Apeldoorn, the Netherlands. Every product has a stock label indicating if a product is in stock and ready for shipment or not. Orders will be shipped with DHL and GLS (who hand our parcels over to local mail carriers). 

## PRICES AND VAT

Prices listed on our website include VAT. Depending on the destination of the parcel the VAT will be deducted in the checkout. The same applies when ordering as a company with a valid VAT number.

## RETURNS AND REFUNDS

In order to return goods please always contact us first at info@knivesandtools.com so we can send you the packing and shipping instructions. We will always refund you the same way you paid us (ie credit card or wire transfer). You will receive the refund within 14 days after we received the return shipment.

If there is any damage to the product as a result of use that does not include determining the functionality of the goods, we reserve the right to charge depreciation. 

It is not possible to exchange your item for another item by returning it. Instead, we will give you a refund and you can then place another order on our website. 

### Damaged or defective items

If you receive a damaged or defective item, we will promptly send you a replacement or issue you a full refund after you have returned the damaged or defective product. You will not be charged any additional shipping or handling fees for replacement shipments.

### Guarantee

All items on our website come with at least a 2-year warranty, even though the manufacturer limits this warranty to 1 year. We say minimum because there are several brands with a longer warranty period. (e.g. Fenix, Eden).

## 1. Placing an order

All orders are placed online either via our website [www.knivesandtools.co.uk](http://www.knivesandtools.co.uk), or when contacting our customer service department via phone.

## 2. Shipping and Delivery time

Our warehouse is located in Apeldoorn, the Netherlands. All products are shipped from this location. Every product listed on the website has a stock label indicating if a product is in stock and ready for shipment or not. Orders to the United Kingdom are shipped with UPS and normally take 3-5 business days to arrive.

## 3. Prices and VAT

Prices listed on the website are in British pounds and include VAT, fees and charges. Customers from the Channel Islands, with the exception of Jersey and Guernsey, do not pay VAT at knivesandtools.co.uk, but will have to pay local VAT upon delivery.

## 4. 18+

All tools listed on knivesandtools.co.uk enhanced with an 18+ logo are only sold to people aged 18 or over. By placing an order and accepting our terms & conditions you declare that you are at least 18 years of age. We may ask you to provide us with proof of identification before we ship your order.

All orders containing products that are labeled 18+ will be shipped with a mandatory identification/age check upon delivery and require an adult signature.

If you are unable to offer sufficient proof that you, as recipient and creator of the order, are at least 18 years of age or older, UPS will take the package and return it to Knivesandtools in the Netherlands. If you are not at home during the initial delivery attempt, UPS will try again later or send the parcel to a pick-up point. In either case, you must be able to identify yourself and prove you are at least 18 years of age or older. If you are unable to do so your parcel will be returned to Knivesandtools. Please note that we may charge you, the customer, for any expenses made during the return process.

## 5. Returns and Refunds

We want to make sure that the products you've ordered live up to your expectations. If, for any reason, you are not satisfied, you can return your order for a full refund* within 30 days of delivery, in accordance with your rights under the Consumer Protection (Distance Selling) Regulations 2000.

*Please note: we may ask for compensation if a product you return can no longer be sold as a new product because it has been used or is damaged.

Our customer-friendly return option ensures a smooth process with no unexpected expenses. You return orders at your own risk and we do not cover any return costs.

Kato Group BV cannot be held accountable for missing or damaged returns and products. As such you should always wrap your return with care. We recommend using the box it came in. Also return accessories or promotional items.

We will always credit you the same way you paid us (ie credit card or wire transfer) You will receive a refund within 14 days after we have received the return shipment.

### Damaged or defective items

If you receive a damaged or defective item please let us know via [info@knivesandtools.co.uk](mailto:info@knivesandtools.co.uk). In most cases we will ask you to return the product for further inspection. After inspection we will either replace, repair or refund the product. You will never be charged any additional shipping or handling fees for replacement shipments.

### Warranty

All items on our website come with a warranty of at least 2 years, even though the manufacturer limits this warranty to 1 year. We say ‘at least’ because there are brands who offer a longer period (e.g. Fenix, Eden).

## 6. Local Laws and Regulations

Every country has its own laws when it comes to knives and other items. When you order from knivesandtools.co.uk you agree to being fully accountable for importing the ordered item(s) to the county of destination. Knivesandtools is not liable when and if items are confiscated by authorities.

Immediately after its release in 2016 the [Mora Garberg](kato://product/MO12642) had quite the impact. Budget brand Morakniv introduces a €100 knife? 'The nerve...', is what most bushcraft enthusiasts thought. At least: until the first enthusiasts got a hold of one. It was love at first sight!

## Prototyping and milling bits


Were you able to produce a working fixture? If so it is time to start producing and testing prototypes with different tools. Used a milling bit too long? You will see it when you look at the finish of the tool. A part of the finish is therefore determined by how often the bits are replaced. A bit can be cheap, but also pretty expensive. Usually a bit is used for milling away material and another for the finish. Often another very fine bit carefully moves over the surface for that nice finish. Might take a lot of time, but it is definitely worth it.


## Finish after milling


In the end you are left with all the parts that were cut out with a CNC-machine. Done? No. They now namely have a surface finish directly from the milling machine. As such you cannot avoid the fact that every part needs to be finished by hand. Sanding, sandblasting, satinizing: whatever the knife needs.


## Cost of a CNC-machine


The CNC-machine itself also doesn't come for free. Modern CNC-machines that are used today can easily take you back 100.000 euros. Sometimes even more, depending on what the machine can do. That amount will be the basis. This does not include the additional costs of the accessories and spare parts. Cost of items such as cutters and coolant. Maintenance. Costs of a CNC-operator that will control the machine, and its (additional) training.


## Conclusion


So is it really that terrible working with a CNC-machine? Absolutely not. It is the only consistent way of shaping so many parts in 3D. And compared to cutting it out by hand with a saw, sharpening and milling parts it is, in most cases, even cheaper.


You do, however, need to know that it is definitely not cheap. And that it does require a great deal of craftsmanship. From drawing to fixture design and from prototyping to the actual production. It is not that simple.


## Gough Custom Knives


To illustrate we have a nice video from Aaron Gough from Gough Custom Knives. He spent years optimizing the production of this signature model. We are talking about thousands of hours spend on one fixed knife with a sheath. In this video he clearly explains how CNC-milling works for him and you can see his machine in action.

We do have to say that he uses a relatively old model from the mid-nineties. Today CNC-machines are little more advanced, faster, and can handle a lot more. The basic principles, however, remain the same and you still need to know what you are doing.


## Which brands are good at CNC-milling?


There are a couple of brands that are exceptional when it comes to milling work. True masters. Sometimes even award-winning. Even better about these new Buck knives is that you can open them with one hand. Both sides of the blade have been enhanced with a thumb stud you can use to easily open the knife. ## Chris Reeve Sebenza 31: the innovations


As the name might already suggest the Chris Reeve Sebenza 31 is an update of the Sebenza 21. This also means that it isn't a completely new model. Only an update with some important changes when compared to the 21.


### Ceramic lockbar interface


Okay this might sound difficult, but it really isn't. The Sebenza 21 is enhanced with a hardened titanium lockbar which immediately closes on the back of the blade to lock it. New for the 31 is that a ceramic ball was pressed into the end of the lockbar. This ball serves as a detent ball and 'lockbar insert' at the same time. Ceramic is harder than titanium and will therefore not wear out as quickly. It will also move better when it comes into contact with steel.

This system is not completely new. The Inkosi and Umnumzaam were already enhanced with this system. It is a lot more sustainable than that of the 21 and therefore an improvement. Characterizing for Chris Reeve Knives is that they always carefully think about these types of innovations. Decisions are not made overnight. Still one of the strengths of this rock-solid brand.

New: Chris Reeve Sebenza 31!

Pocket knives come in all shapes, sizes and price ranges. Whether you store your knife in a display case, caravan, toolbox or carry it with you every day: for every purpose you will be able to find a pocket knife. When you start looking for a suitable pocket knife you will find knives which will only cost you a little, but also knives that will take you back 300 euros or even twice as much.


We often hear that people believe that the brand name is what gives a knife its price. It is something we like to call jumping to conclusions. A sentiment which brings us to the following question: why do you pay so much for one knife and so little for another?

### Price range:

Better and more exclusive materials make the knives more expensive. A Byrd knife is often priced between 30 and 60 euros. With occasional outliers. While Spyderco knives often start at 50 euros and can go up to 250 euros for the standard models.	 Sprint Runs can go up to 350 euros and the more exclusive Spyderco knives are often listed at 500/600 euros.

### Range:

Even in terms of range there is a difference. As we are writing this versus we offer 30 Byrd knives on our website and 260 Spyderco knives. And that's not counting the Spyderco kitchen knives we also sell. Quite a difference.

Spyderco achieves this number by producing many different versions of a popular model. Not only in terms of colour and handle material. Also in terms of types of steel and sometimes even locking mechanisms. Spyderco also produces knives for specific target groups. Take the [Salt-serie](kato://category/spydercosaltserie), for instance, for maritime use. So the chances of finding the right Spyderco knife are also much higher than with Byrd. Byrd Knives also doesn't produce Sprint Runs and Limited Editions.

At the 2018 Blade Show Chris Reeve Knives introduced their first slip joint called the [Impinda](kato://product/CRIMP) and ever since the Impinda has been taking over the world. But not just the Impinda, CRK also put themselves on the map again. After all, CRK won the ‘American Made Knife of the Year’ award with the Impinda, and introduced a couple of new, different innovations. But how did the Impinda come to be? And why is it such an important step for Chris Reeve Knives?

A convex grind is difficult to produce in large numbers. For that reason you hardly ever come across it on production knives. And yet [Fällkniven](kato://content/migrated_pageid_321) has successfully done so for over 20 years. Quite the achievement.


If you carry out more detailed work with a knife with a convex edge you will immediately notice the difference. Take, for instance, feather sticks. You will notice that you can cut the curls more evenly.


There are, of course, also 'downsides' to the convex grind. Some people find it a lot harder to sharpen. After all, you sharpen a 'convex' edge, and not a flat v-edge. The solution is stropping. In doing so you keep the convex grind sharp, without having to sharpen it too often. If the knife has become dull, you can use sharpening stones to sharpen a great convex grind, or you can use a sharpener such as the [Work Sharp Ken Onion edition](kato://product/WSKTS-IKO-UK), which naturally leaves you with a convex edge.


## Where are Fällkniven knives made?


In contrast to what people might think, Fällkniven knives are made in Japan. For years Fällkniven has been doing business there with the best knife makers the city has ever known. The fixed knives are produced by Hattori. Here, they apply the convex grinds by hand. The folding knives are made by Moki, a very prominent party when it comes to stunning gentleman's knives.


## Difference Fällkniven F1 and F1 Pro


For years the conventional Fällkniven F1 was the standard. And today it is still one of the best and most popular outdoor knives on the market. Fällkniven, however, decided in 2015/2016, twenty years after the original release of the F1, that it was time to produce a modified version of the F1: the Pro collection.


The most important differences between the two are the type of steel, the guard, the size of the handle and the scope of delivery.


### CoS vs VG10


One of the main differences is the type of steel. The F1 is made from laminated CoS steel, and the F1 Pro is made from laminated Elmax steel. Let's start with lamination: this means that there is a core of good and hard knife steel, laminated in between two layers of softer stainless steel. As such the blade is stronger and tougher, while the edge is still very hard.


Originally, the F1 was made from VG10 steel and the F1 Pro was made from CoS steel. VG10 is stainless and easy to sharpen. It retains its sharpness well and can definitely handle its own. A great type of steel for an all-round outdoor knife. But Fällkniven felt they could do better.


For that reason they started testing CoS-cobalt steel for a couple of years. Still stainless and relatively easy to sharpen, but CoS will retain its sharpness even longer and can definitely handle its own. On a chemical level VG10 and CoS are not that different. However, we suspect that CoS has a finer grain structure. Just like the difference between a 'normal' type of steel and a powdered type of steel. As such it will retain its sharpness longer and can handle a lot more.

Meanwhile, Fällkniven has continued using CoS steel in the production of the F1 and the steel of the F1 Pro has been upgraded to Elmax steel. Böhler Elmax is a fine and tough steel from Austria. Elmax stays sharp for a really long time but is also easy to sharpen yourself. Elmax is also very corrosion resistant.

Not only the type of steel is different about the F1 Pro. The thickness of the blade and the included grind are also different. The Fällkniven F1 has a 4.3 mm thick blade. The F1 Pro has a 4.9 mm thick blade. As such it feels a little more robust. Because of the lower grind the knife also has more 'spine' left to absorb the heavy loads. The F1 Pro is better suited to handle more serious cutting work.

Anyone who is familiar with [Chris Reeve Knives](kato://content/migrated_pageid_329) knows that they produce a limited CGG collection each year. The pocket knives from this collection are knives with intriguing computer generated graphics that are only available in that specific year. If the year is over they are discontinued. This makes them real collector's items! But that is not all. Chris Reeve Knives surprised the knife world in 2018 with the new Impinda. A cooperation with knife maker and designer Bill Harsey. This ground-breaking modern slipjoint, with an innovative slipjoint mechanism, definitely appealed to us as Europeans. At the Shot Show we got the opportunity to take a closer look at the Impinda and the new CGG models with Tim Reeve, and to learn more about the story behind these remarkable knives.

When you are asked to use one word to describe Chris Reeve’s entire design and manufacturing career the only thing you can think of to say is **precision**. There is not one knife manufacturer out there who works as precise as Chris Reeve Knives. Take, for instance, the fact that Reeve once hired an engineer who previously worked for Boeing. The same engineer called Reeve a fool for maintaining tighter tolerances for his knives, than Boeing had ever maintained for its planes.

## The one and only Chris Reeve Sebenza


The most famous Chris Reeve design is the legendary [Sebenza](kato://product/CRSEB21L). The name Sebenza means work, and although a lot of people often ‘think twice before cutting once’ using a knife from this price range the Sebenza has definitely been designed to work with. The materials, shapes, tolerances and technical ingenuity: the [Sebenza](kato://product/CRSEB21L) is absolutely unique. Perhaps it should even be considered to be the most copied pocket knife out there.


## The Sebenza 21 Pivot Bushing


A unique aspect of the Sebenza 21 is the construction of the pivot. In short it comes down to this, the knife is guaranteed to be blade play free and centred, while still moving smoothly. To dive deeper into the matter: this because Chris Reeve has the distance between the frame determined by a steel tube. This tube is the same length as the thickness of the blade and washers combined (including a minimal tolerance for grease etc.).

## Gerber Strongarm: a rock-solid blade
The strong blade of the Strongarm is made from 420HC steel. The HC stands for High Carbon. . That means that this steel has a higher carbon content than regular 420 steel, for example. Steel with a higher carbon content will become harder after heat treatment. Moreover, this steel also contains 13% chromium, which makes it corrosion resistant. The blade is hard enough to use for chopping tasks without losing sharpness too quickly. However, don't worry if your Strongarm does become dull after prolonged use, because it's easy to sharpen. In short; a great steel type for a survival knife!

The black coating adds an extra layer of protection. It also ensures the blade won't reflect light as much. With a tactical survival knife like the Gerber Strongarm, it goes without saying that the tang of the blade extends all the way throughout the handle. It even protrudes from the handle a bit. Great when breaking something. For example, breaking a window or collecting cockles that are stuck on a rock. Something you would not rather use your knife for.

You can sharpen your knives in many different ways. The well-practiced enthusiast will be a big fan of Japanese water stones or a manual sharpening system. When you have mastered the technique sharpening on water stones will leave you with the best results. However, it might take you some time. When you are looking for fast results and will accept a ‘common sharp’ edge, an electric sharpening machine could be the answer. Within a minute your knives will be as sharp as they were before. At least, if you have a good machine.


But what is a good sharpening machine? At [Taste of Home](https://www.tasteofhome.com/article/best-knife-sharpener/), the largest culinary magazine in the United States they asked the same question. For that reason they tested multiple sharpening machines, ranging from prices from 20 to 200 dollars. The results are based on user-friendliness, sharpness (based on the famous paper test) and price-quality ratio. 


## And the winner is…


The winner is praised because of the three separate sharpening phases: a coarse sharpening stone, a fine stone and finally a polishing phase. Many other sharpening machines – according to Taste of Home – go through these stages automatically. You cannot influence it if, for instance, your knife is so blunt it should be treated with a coarse sharpening stone for a longer period of time. The machine that won the test, which has also been enhanced with a very sharp sharpening angle of 15 degrees, does have this feature. Tested in the United States: what is the best sharpening machine?

## 18650 battery, 21700 battery, CR123A battery or 16340 battery?

A light that runs on 18650 batteries can often also handle CR123A batteries. Both have advantages and disadvantages.

### 18650 batteries

[18650s](https://www.knivesandtools.com/en/ct/18650-lithium-ion-accumulators-and-loaders.htm) contain Li-ion cells and are highly suitable for flashlights that are used regularly. They provide lots of power and are rechargeable, making them an attractive and economical choice for intensive use. They don't leak, and they have a high capacity. But you do have to bear the following in mind: 18650 batteries like to be used regularly. Are you planning to put an 18650 battery away for longer than 4 months? Then you'll have to use it and recharge it in the meantime. They stay at their best when used regularly.

### 21700 batteries

[21700 batteries](https://www.knivesandtools.com/en/ct/21700-lithium-ion-batteries-and-chargers.htm) are rechargeable lithium-ion batteries. Like other batteries, they are named after their dimensions: 21700 batteries are 21 mm in diameter and 70 mm long. Because they are rechargeable, they're ideal if you use your flashlight regularly. It's good to remember that 21700 batteries can be protected or unprotected. This protection ensures that the battery doesn't get overloaded. Moreover, a protected battery doesn't overheat. So always choose a high quality battery. The biggest difference between 18650 and 21700 batteries is their size. 21700 batteries are slightly bigger than 18650 batteries. Because it is a little bigger, a 21700 battery also has more power and a longer run time.

### CR123A batteries

These are lithium batteries that cannot be recharged. Often, you can replace one 18650 battery with two [CR123A batteries](https://www.knivesandtools.com/en/ct/cr123a-batteries.htm). The big advantage of a CR123A battery is that it holds its charge for 9 years without any significant self-discharge. They also perform better in very cold conditions than Li-ion batteries. Are you thinking of leaving a flashlight in your meter box in case the power goes out? Or in your car for a long time in case you break down? [Then CR123A batteries are generally a better choice than 18650 batteries](https://www.knivesandtools.com/en/ct/endurance-test-on-18650-and-cr123a-batteries.htm).

### 16340 battery

From a technical point of view, a [16340 battery](https://www.knivesandtools.com/en/ct/aa-batteries-penlite.htm?battery-type=16340) is equivalent to an 18650 battery, but in the size of a CR123A battery. For old flashlights that are too narrow for an 18650 battery but can take CR123A batteries, or for lights that normally run on one CR123A battery, 18340 batteries are definitely worth considering. Some flashlights that run on one CR123A battery deliver a higher capacity with a 16340 battery than with a regular CR123A battery. On the other hand, a 16340 battery usually has a relatively low capacity and therefore doesn't last for as long. The advantage they offer is that they're rechargeable. Again, they need to be used and recharged regularly in order to maintain their capacity as well as possible.

A knife set is expensive, so you want to enjoy it as long as possible. The way in which your knives are stored can have a great influence on the life span and quality of the blades. That's why, when buying new knives, it's also important to consider how you will store these.

The importance of blade guards

As a pocket knife specialist and collector I am surrounded by the most amazing pocket knives, outdoor knives and multi-tools on a daily basis. I recently moved out of parents' house and suddenly I needed a good kitchen knife. I know a lot about pocket knives. But what makes a good kitchen knife?! As my freshly baked bread comes out of the oven the first thing I want to do is try a piece. However, cutting a warm loaf of bread is not that easy. ### The knives retain their sharpness longer

When you use a brand-new knife for the first time you simply don't know what is happening to you. Without having to apply any pressure to can easily cut through vegetables, fruit and meat! Kitchen knives, however, will always become blunt in time, but the speed at which that happens can be limited. By, for instance, using a magnetic knife strip. After all, as long as the edge doesn't come into contact with other knives or hard materials, you don't have to worry about a thing. That is why with our knife magnets the magnetic strip is always located behind the wood. The result is that the knife only comes into contact with the wood. As such the edge won't be damaged which means that your knife will stay sharp longer.

However, as soon as a knife comes into contact with something hard, other kitchen knives, for instance, it will become blunt a lot faster. As such you should never purchase a magnetic knife strip made from iron, or one with iron strips. Iron will, after all, damage the edges of your kitchen knives. Always choose a material that is softer than the blade. Wood or plastic, for instance. We do sell stainless steel magnetic knife strips, but the plastic or rubber studs prevent damage.

### Safety

If you are looking for a knife in a drawer that also contains other knives you could end up hurting yourself. A magnetic knife strip will therefore not only make sure your knife won't become blunt, it will also keep your fingers safe! You place the blade of the knife against the strip and the magnet will make sure the knife stays in place. Because our knife magnets are comprised of one large, horizontal magnet the strip is strong enough to store all kitchen knives. As such you are not limited by the amount of knives you can hang or where you can place them on the strip. Even heavy knives won't slide off. **Sakai Takayuki santoku**


The most famous Japanese kitchen knife is, without a doubt, the santoku. A Japanese version of the chef's knife. One of the best pieces has to be the [santoku](kato://product/TA07472) produced by Sakai Takayuki. This knife is enhanced with a 33-layer damasteel blade with a core made from hardened VG-10. The top of the blade is hammered. This gives the knife its unique look and feel and it is also practical. It ensures that ingredients don't stick to the blade. **Kai Shun nakiri**


A little less well-known, but not any less beautiful: the nakiri. A traditional vegetable knife which can be recognized by its rectangular blade. ## Eden Classic Damast carving knife

When you want to cut a (thin) slice of meat you use a carving knife. Whether you are cutting poultry or any other type of meat, this knife is indispensable. A carving knife is enhanced with an extra-low blade to make sure you have less contact surface between the meat and the knife. As such the slices don't stick to the blade. Poultry shears are designed as such they can cut through, for instance, bones, tendons and joints of poultry. The leverage effect of the shears is enhanced by the slightly curved shape. It ensures you don't have to apply too much pressure.

You won't easily hurt yourself with the Zwilling Twin Select poultry shears. The sharp blades of the scissors are enhanced with a serrated edge. Poultry Line-up

When I was younger I worked as an assistant chef in a French kitchen. I was fifteen at the time and responsible for the starters and desserts. My favourite dish to prepare was a carpaccio made from tenderloin or smoked salmon. To cut it properly I always carried a razor-sharp knife with me. Half of what I cut ended up on my own plate, something the owner, fortunately, thought was fine. At the time I already noticed that even professional chefs don't always use razor-sharp knives. I started teaching myself and expanded my sharpening knowledge throughout the years. Today, over 15 years later, that interest has become a part of my job making it possible for me to give advice on sharpening and how to use knives.

The [pull-through sharpener](kato://category/pulltroughsharpeners) is one of the easiest and fastest ways to sharpen your knives. The way your knife is guided ensures the right sharpening angle, one of the most important aspects when sharpening a knife. Perhaps the sharpening result is less razor-sharp than sharpening on a whetstone, but it is quick and easy. But which pull-through sharpener is right for you? We tested the most popular pull-through sharpeners for ease-of-use, feel, speed and resulting sharpness.

## Testing the sharpness

To determine sharpness, we used the [Edge-on-Up sharpness tester](kato://category/edgeonupbrand). This Edge-on-Up accurately measures the pressure it takes to cut through a small nylon thread. The Edge-on-Up only tests a small part of the blade. That is why we have tested each blade on 6 different spots. The average counts as the result of the sharpness test. We carried out the test with the [Eden Classic Damast chef's knife](kato://product/EQ2030-020). This is a popular knife, but it's also an average chef's knife like the ones most people will have at home.

To keep the test as fair as possible, we started each test with a fixed sharpness of 600 BESS. It is typically around this level of sharpness that a knife could use some sharpening. To achieve this sharpness (or rather bluntness) for each test, we passed a ceramic sharpening steel at a 90-degree angle over the edge of the knife until it had the desired bluntness.

We took five different knife sharpeners and used them under similar conditions, following the manufacturer's instructions. We did continue sharpening until we couldn't get the knife any sharper.
