The Güde Alpha Olive series combines the reliability of German steel with a handle of highly ornate olive wood. Just like the knives from the 'regular' Alpha series, the Alpha Olive knives are mostly made by hand following old German traditions. From large Güde Alpha Olive chef's knives to small Güde Alpha Olive peeling knives. The handles of the Alpha Olive series are made from carefully selected olive wood from up to 500 years of age. The grain has a graceful and distinct variation between light and dark brown. As a result, every knife has a unique and elegant look.

The blades of Güde Alpha Olive kitchen knives are made of ice-hardened chromium-vanadium-molybdenum steel with a hardness of about 57-58 HRC. Choosing the right steel for knives is a complex task. The steel must be hard enough to provide durability, but not too hard or it will break during use. At the same time, it should not be too soft either, otherwise the knife will lose its sharpness very quickly. After the blades have been forged and sharpened, they will go through a process called ice hardening. The knives are cooled down to -80 °C to improve the microstructure in the steel. This creates a corrosion-resistant and hard blade that will not easily break!
Handle material of Güde Alpha Olive kitchen knives
The handles are made from carefully selected olive wood from up to 500 years of age. Olive wood is very resistant to moisture. The grain has a graceful and distinct variation between light and dark brown. The scales are attached to the steel with rivets, giving the knives a traditional look.
The bolster of the knife functions as a finger-guard and a weight to ensure perfect balance. The metal pommel at the end of the handle gives the knife its characteristic profile. These knives have a full-tang construction. This means that the steel runs throughout the entire handle. It ensures the knife is perfectly balanced.
