Features of the Kai Shun Kagerou series: Japanese elegance with serious cutting power

The handmade Kai Shun Kagerou series is for those who take cooking seriously and value knives with exceptional character. This high-end series combines Japanese precision with a luxurious, almost artistic finish. Everything about the knives feels carefully considered: from the flowing design to the balance during cutting and the refined details in the finish. The series consists of 6 models, so you can choose the right knife for different cutting tasks. An extra special touch: the series received the Red Dot Award 2025, a fine recognition of its strong design and high-quality finish.

Kai Shun Kagerou blade: unique construction and hand-sharpened

The blades in the Kagerou series have a distinctive dual-core construction. In this construction, flexible VG2 steel and extremely hard VG10 steel come together in 1 blade with no fewer than 71 layers. This ensures long-lasting sharpness retention, impressive sharpness and a fine cutting experience.

Visually too, this construction is different from what you may be used to. The ladder-bar damascus pattern, created by the dual-core construction, appears only on the bottom of the blades, close to the edge. Together with the copper line and the polished stainless-steel outer layer, this gives the knives a striking, layered look that you do not often see.

And yes, you read that correctly: a copper line separates the damask steel from the rest of the blade. This technique is called cum ai. A forging process in which copper is visibly incorporated into the blade's construction. Technically remarkable, but above all very striking.

The blades are hand-sharpened at an angle of 16 degrees per side. As a result, the knives feel exceptionally sharp and precise. Ideal for fine slices of vegetables, thin cuts of meat or carefully portioning fish.

Kai Shun Kagerou handle: grey pakkawood

The grey handles are made from stabilised pakkawood. This makes them strong, moisture-resistant and durable, without losing their elegant wooden look. The symmetrical shape fits comfortably and securely in the hand, so you maintain plenty of control during different cutting techniques. Another beautiful detail: the end cap features an engraving of the Shun logo, giving the knives an extra luxurious appearance. Together with the seamless transition between bolster, handle and end cap, it delivers both a luxurious look and an exceptionally balanced feel while cutting.
